Gıdalara tat ve aroma vermek için kullanılan baharatların aynı zamanda antimikrobiyal, antioksidan, antimutajenik, antienflamatuar ve bağışıklık düzenleyici gibi özelliklere sahip olduğu çeşitli çalışmalarda belirtilmiştir. Yapılan çalışmalar baharatların çok sayıda biyoaktif bileşene sahip olduğunu göstermektedir. İçermiş oldukları biyoaktif bileşenler sayesinde baharatlar ilave edildikleri gıdaların raf ömrünün uzatılmasına, oksidasyon reaksiyonlarına karşı korunmasına da katkı sağlamaktadır. Tüketicilerin doğal içeriğe sahip gıdalara karşı artan talebi baharatlara olan ilgiyi de arttırmakta ve süt ürünlerinde doğal bir ingredient olarak baharatların kullanımına yönelik araştırmalar da önem kazanmaktadır. Bu derleme ile gıdaların üretim proseslerine multifonksiyonel bileşenler olarak dahil edilen baharatların süt ve ürünlerindeki etkilerinin incelenmesi amaçlanmaktadır.
Günlük diyet ile fazla miktarda alınan tuzun sağlık üzerine olumsuz etkileri olduğu bilinmektedir. Dünya Sağlık Örgütü tarafından da günlük diyet ile alınan tuz miktarının azaltılması gerekliliği bildirilmiştir. Yüksek tuz içeriğine sahip bir gıda ürünü olan peynirde tuz miktarının azaltılmasına yönelik farklı yaklaşımlar söz konusudur. Tuz peynirin yapısal ve duyusal özelliklerini etkileyen önemli bir bileşen olduğu için, tuz miktarının azaltılma prosesi, tuz miktarının azaltılmasına yönelik uygulanan prosesler üretimde kritik aşamalar olarak kabul edilmektedir Tuz miktarının azaltılması amacıyla farklı alternatif yöntemler tek başına ya da kombine halde uygulanabilmektedir. Bu makalede peynir üretiminde kullanılan tuz miktarının azaltılmasına yönelik uygulanabilecek alternatif yöntemler ve bu yöntemlerin ürünün özelliklerine etkileri hakkında bilgi verilmesi amaçlanmıştır.
The aim of this study was to characterise the impact of mixed probiotic strains and fortification with chestnut beverage (CB) on metabolomic formation in a plant‐based dairy matrix. Bacterial growth, nutritional composition and metabolomics were investigated during the period of 21‐day storage. The amino acid score (AAS), essential amino acid index (EAAI), nutritional index (NI) and biological value (BV) of the samples were determined to characterise their nutritional quality. The fortification with CB increased the nutritional quality of samples due to high EAAI, AAS, NI and BV. Using HPLC‐DAD, GC–MS and HS‐GC/MS‐based instrumental techniques, 48 metabolomics were identified.
The aim of the present work was to evaluate the viability of probiotic bacteria in a fermented milk beverage fortified with apple juice and to understand the utilization of apple juice as a prebiotic source. The results indicated that the probiotic bacteria used in this study were viable over the predicted shelf life, and the cell counts ranged from 7.48 to 12.00 log10 cfu mL-1, since in order to confer the beneficial health effects on the host the probiotic bacteria must be at a minimum concentration of 6.0 log10 cfu mL-1 at the moment of consumption. However, Lactobacillus casei exhibited higher survival than all the other strains, possibly due to its higher tolerance to low acidity. During fermentation and storage of probiocated milk beverage fortified with apple juice the formation of organic acids were determined as an indirect characteristic of the LAB growth. Lactic, acetic, malic, tartaric and citric acids were the main organic acids, and the amount of propionic and butyric acids as short chain fatty acids (SCFAs) mostly increased during fermentation, depending on the strain.
In the present study, effect of xanthan gum was evaluated by using in vitro assay and skim milk model system on metabolic activity and survival of two probiotic strains, namely B. lactis and L. casei. In vitro assay was carried out identifying by pH, optical cell dencity (OD) and formation of postbiotics (lactic, acetic, propionic and butyric acids) in different basal media including glucose, inulin and xanthan gum as carbon source. The highest pH values were recorded for control (without carbon source) and media with xanthan gum, whereas the media with glucose and xanthan gum had the highest OD values. In comparison to strains, B. lactis had higher pH and lower OD values than L. casei. It was found that xanthan gum supported the formation of postbiotics as result of bacterial fermentation. In the skim milk model system, xanthan gum did not demonstrate a negative effect on probiotic viability, and the counts of both strains were above the required level for health benefits (8 Log cfu g-1) after 28-day storage. The use of xanthan gum in skim milk matrix positively affected technofunctional properties such as syneresis, color, textural parameters of samples. Consequently, xanthan gum is a good ingredient with multifunctional properties for industrial applications, and it also may be considered as an innovative approach to discover novel prebiotics.
