RESUMO -o objetivo deste trabalho foi caracterizar e avaliar a qualidade pós-colheita do mamão Formosa cv. tainung 01, comercializado em diferentes tipos de estabelecimento do município de Mossoró-Rn. os frutos foram coletados em três tipos de estabelecimentos comerciais. os dias das coletas foram considerados como blocos e os locais de comercialização, como tratamentos. Houve grande incidência de manchas, injúrias, deformações e podridões que comprometeram a aparência externa dos frutos. a aparência externa não comprometeu a qualidade física e química do mamão, independentemente do tipo de estabelecimento. RESUMOO objetivo deste trabalho foi caracterizar e avaliar a qualidade pós-colheita de banana 'Pacovan' comercializada em diferentes tipos de estabelecimentos do município de Mossoró-RN. Os frutos foram coletados com grau de maturação tipo 6 (fruto com casca totalmente amarela). O delineamento experimental foi em blocos ao acaso com três tratamentos (tipos de estabelecimentos) e seis blocos (dias de coleta). As variáveis analisadas foram: massa total e da polpa, comprimentos longitudinal e transversal, aparência externa, firmeza, sólidos solúveis, acidez titulável, relação SS/AT, preço, incidência e frequência de isolamento de fungos. Os frutos comercializados nos três tipos de estabelecimentos apresentaram qualidades físicas e químicas que se enquadram no padrão considerado ideal para o consumo in natura. Bananas do estabelecimento A se destacaram com maior massa e comprimentos longitudinal e transversal. Foi encontrada alta incidência de manchas e/ou podridões que comprometeram a aparência externa das bananas comercializadas, independente do tipo de estabelecimento.Palavras-chave: Incidência de fungos, mercado, Musa sp, pós-colheita Postharvest quality of 'pacovan' banana commercialized in different establishments in the municipality of Mossoró, RN, Brazil ABSTRACTThe objective of this work was to characterize and evaluate the post harvest quality of "Pacovan" bananas, commercialized in different types of establishments in Mossoró municipality, Rio Grande do Norte, Brazil. The fruits were collected with maturation type 6 (fruit with total yellow peel). The experiment was carried out in a randomized block design, with three treatments (types of establishments) and six blocks (harvest days). The analyzed variables were: total and pulp mass, longitudinal and transversal length, external appearance, firmness, solubles solids, titratable acidity, SS/AT relation, price, incidence and frequency of fungus isolation. The fruits from the three establishments showed physical and chemical characteristics that fit in the ideal standard for in natura consumption. Bananas of the A establishment were characrerized by bigger mass and longitudinal and transversal lengths. High incidence of dark spots and/or putrity was observed, which contributed to degradation of the external appearance of the commercialized bananas, regardless of the establishment type.
