RESUMOApesar do potencial de cultivo do beijupirá (Rachycentron canadum), quando se fala em processamento desta espécie de peixe marinho, os conhecimentos de vários aspectos da cadeia produtiva ainda são escassos. O objetivo do presente estudo foi de avaliar o rendimento dos filés e dos resíduos da filetagem do beijupirá selvagem e cultivado, considerando-se o rendimento das vísceras (RVI), rendimento da cabeça (RCA), rendimento da carcaça sem a cabeça (RCR), rendimento do filé inteiro sem pele (RFI), rendimento da pele com escamas (PPE) e o rendimento da barriga (PBA). Foram utilizados doze exemplares de Beijupirá (Rachycentron canadum) com peso médio 2.435 g sendo seis selvagens adquiridos no comércio local do município de Itarema, estado do Ceará, e os outros seis cultivados obtidos da Fazenda de Maricultura de Búzios, localizada em Ilhabela, estado de São Paulo. Os peixes foram eviscerados, decapitados e filetados manualmente. Os resultados obtidos possibilitaram concluir que não houveram diferenças significativas para o rendimento do filé, vísceras, cabeça e pele entre os beijupirás selvagens e de cultivo. Porém, foram observadas diferenças significativas para os rendimentos da carcaça e do corte da barriga. Palavras-chave:Rachycentron canadum, rendimento, processamento.
