Comunicação Breve/Short Communication Resumo O termo "comida de rua" ou "lanche de rua" tem sido utilizado para designar alimentos e bebidas vendidos em vias públicas, destinados ao consumo imediato ou posterior, mas que não necessitam de etapas adicionais de processamento. O objetivo do presente estudo foi estimar a prevalência de contaminação microbiológica e parasitológica em amostras de maionese caseira provenientes de carrinhos de cachorro-quente. Foram feitas análises microbiológicas e parasitológicas em dez amostras de maioneses caseiras coletadas de carrinhos de cachorro-quente. Todas apresentaram valores acima do recomendado para coliformes totais, 40% para Staphylococcus aureus e 40% para possível Salmonella sp. Nenhuma das amostras apresentou positividade para estruturas parasitárias. Todas as amostras apresentaram-se insatisfatórias para as análises microbiológicas. Devido à grande importância do comércio ambulante de alimentos é recomendável que os profissionais que trabalham nesses locais sejam capacitados quanto a técnicas de higienização do local de trabalho, preparo higiênico dos lanches e molhos e higiene pessoal. Palavras-chave INTRODUÇÃOO termo "comida de rua" ou "lanche de rua" tem sido utilizado para designar alimentos e bebidas vendidos em vias públicas, destinados ao consumo imediato ou posterior, mas que não necessitam de etapas adicionais de processamento.(1) Nos últimos anos, diversos fatores, particularmente socioeconômicos, impulsionaram a comercialização de alimentos nas vias públicas, em especial nos países em desenvolvimento.(2) Essa atividade informal, além de satisfazer as necessidades de obtenção de alimentos rápidos, de baixo custo e em local próximo ao trabalho, também é uma alternativa para o sustento de milhões de pessoas, alternativa de renda para desempregados e possui participação na economia do país. Entretanto, esse tipo de atividade pode oferecer riscos à saúde da população.(3-5) A urbanização, além de trazer gradativos aumentos desse tipo de comércio, também mostrou os riscos que podem representar.(6,7) Cerca de 25% a 30% do gasto mensal familiar nos grandes centros urbanos na América Latina se destina ao consumo de alimentos comercializados por vendedores ambulantes de alimentos. Entre os organismos ou grupo de organismos mais relacionados com doenças transmitidas por alimentos (DTAs), destacam-se os coliformes totais, os coliformes fecais ou termo tolerantes e o Staphylococcus aureus. Organismos coliformes são bastonetes Gram negativos, que possuem, como habitat natural, o trato intestinal do homem e de animais. Pertencem à família Enterobacteriaceae, incluindo muitos gêneros, entre eles Escherichia, Salmonella, Shigella, Enterobacter, Klebsiella, Serratia, Proteus, Providencia, Citrobacter. Em alguns casos, a bactéria não é a responsável por sinais e sintomas, e sim as suas toxinas. A situação se agrava quando a bactéria ou sua toxina é termo resistente.
