A grande extensão territorial do Brasil aliada às condições adequadas do clima e do solo, destacam o país no que se refere à produção de frutas. O processamento dessas frutas para a elaboração de polpas, sucos e outros derivados é responsável pela geração de toneladas de resíduos, os quais são, em sua maioria, descartados de maneira inadequada, gerando poluição ambiental. Nesse viés, objetivou-se com o presente estudo investigar o potencial dos resíduos de frutas e sua utilização na formulação de novos produtos alimentícios, bem como a metodologia empregada para sua elaboração. Este trabalho discute alimentos saudáveis e os efeitos de seus compostos bioativos na promoção e manutenção da saúde por meio de uma revisão bibliográfica. Alimentos funcionais são aqueles que, além da nutrição básica, oferecem benefícios para a saúde (mas não medicinais) que são seguros de consumir mesmo sem recomendação médica. Os alimentos funcionais se distinguem pela presença de compostos bioativos como carotenoides, ácidos graxos poliinsaturados (ômega-3, EPA e DHA), fibras, prebióticos e probióticos e compostos fenólicos. Nesse sentido, objetivou-se com o presente estudo investigar o potencial biotiavo presente em alimentos funcionais, bem como seus possíveis benefícios para a saúde humana. The aim of this study was to research the use of food dyes and their risks to human health. Its methodology was descriptive bibliographic review. Based on the survey, it is verified that although natural dyes are the most indicated, artificial ones are the most used by the food industry because they have high stability, uniformity in the color conferred, high tintorial power, exemption from microbiological contamination and relatively low production cost.
The aim of this study was to compare the nutritional assessment using bioimpedancein active and institutionalized elderly over 60 years. We evaluated individuals from a long-term institution and physically active individuals from a city in the interior of São Paulo. Descriptive and statistical analysis were performed. Unpaired Student's t-test was applied considering 5% significance using GraphPad Prism software. The active group had a higher prevalence of women (73.40%), high calf circumference levels (37.21±3.16cm) and fat percentage (37.47±4.91%). Most elderly in both groups (53.30%) were classified as normal weight by the Body Mass Index. The active group was not at risk of developing sarcopenia, so the practice of regular exercise generates numerous benefits for the senile population, such as improved quality of life, health promotion and assistance in preventing pathologies.
