O teor de ferro total e ferro bioacessível foram determinados em carne através da espectrofotometria na região do visível pelo método da 1,10-fenantrolina. As amostras foram cozidas, desidratas e algumas preparadas como carne de sol. Elas foram submetidas a uma simulação da digestão gastrointestinal para a avaliação da bioacessibilidade de ferro. Entre as amostras analisadas, o coração e fígado apresentaram os maiores teores de ferro total e bioacessível. Após o cozimento, houve um aumento da bioacessibilidade do ferro. O fígado e o coração contribuíram respectivamente com 28 e 20%, em termos de bioacessibilidade. A inserção da bioacessibilidade em tabelas de composição de alimentos é importante, pois se trata de informações nutricionais mais próximo da realidade. Foi possível quantificar o teor de Fe 2+ em todas as amostras analisadas, no entanto, o Fe 3+ só foi quantificado na amostra de carne de sol cozida e nas amostras de coração. O método empregado não foi sensível para à detecção do ferroheme e observou-se que houve um aumento do ferro iônico com o cozimento devido à liberação do ferro a partir do complexo heme. ResumoThe content of total iron and total bioaccessible iron were determined in beef through visible spectrophotometry by the method of 1,10-Phenanthroline. The samples were cooked, dehydrated and prepared as jerked beef. They were submitted to a simulation of gastrointestinal digestion for the evaluation of bioaccessibility. Among the samples analyzed, the heart and the liver had the highest levels of total iron and total bioaccessible iron. After cooking the samples, there was an increased bioaccessibility of iron. The cooked liver and heart contributed respectively with 28% and 20% in terms of bioaccessibility The insertion of bioaccessibility in food composition tables is important, as it comes to nutritional information closer to reality. It was possible quantify the amount of Fe 2+ in all samples, however, only Fe 3+ was quantified in samples of cooked sun meat and in the samples of heart. The method was not sensitive enough to detect the heme iron and it was observed that an increase of ionic iron with cooking due to liberation of iron from the heme complex.
Caracterização do Complexo de Inclusão do Óleo Essencial de Croton zehntneri e β-Ciclodextrina Preparados Através da Secagem por Atomização e Liofilização Resumo: Croton zehntneri (CZ) é uma espécie aromática da família Euphorbiaceae, nativa do Nordeste do Brasil, rica em óleo essencial (CZEO) com propriedades antioxidante, vasorelaxante, bactericida e fungicida. Apesar dos inúmeros potenciais biológicos e farmacológicos, óleos essenciais são instáveis e possuem limitada solubilidade em água, características que podem ser melhoradas pela formação de complexos de inclusão com ciclodextrinas (CDs). No presente estudo, o complexo de inclusão de CZEO e β-CD foi preparado por co-precipitação acoplada à liofilização e secagem por atomização. O complexo de inclusão foi caracterizado por espectroscopia vibracional (espectroscopia Raman e FT-IR) e a eficiência de complexação determinada por cromatografia gasosa acoplada à espectrometria de massa (CG-EM). Foi observado que a co-precipitação acoplada à liofilização possibilitou uma maior eficiência de complexação quando comparada ao spray drying. A espectroscopia Raman confirma a formação do complexo de inclusão entre CZEO e β-CD por ambos os métodos de preparação.
Croton zehntneri Pax et Hoffm. is a plant from Northeastern Brazil, whose main component of its essential oil is estragole. Its thermal instability and low aqueous solubility prevent its technological application. This study aimed to prepare and characterize the Croton zehntneri essential oil (CZEO) complexed with β-cyclodextrin (β-CD), and to evaluate antioxidant activity of free and complexed-CZEO in vitro systems by the elimination of 2,2-diphenyl-1-picrylhydrazyl radicals (DPPH•), 2,2’-azinobis-3-ethylbenzothiazoline-6-sulfonic acid (ABTS•+), hydroxyl and nitric oxide, as well as their ability to transfer electrons by the reducing potential. The infrared spectroscopy and thermal techniques demonstrated the formation of the inclusion complex (Est/β-CD) obtained by spray drying method. The free CZEO and its Est/β-CD at 0.9, 1.8, 3.6, 7.2, 14.4 and 28.8 μg mL–1 showed the ability to remove DPPH• (EC50 (half maximal effective concentration) 26.06 and 9.46 μg mL–1, respectively) and ABTS•+ (EC50 22.73 and 4.47 μg mL–1, respectively), nitric oxide inhibition (EC50 17.65 and 2.68 μg mL–1, respectively), hydroxyl radical sequestration (EC50 23.42 and 2.34 μg mL–1, respectively) and reducing potential (EC50 46.48 and 12.47 μg mL–1, respectively). The formation of the inclusion complex significantly increases its antioxidant potential.
