Neste trabalho foram avaliadas as características texturais e físico-químicas do gel de surimi de Jundiá (Rhamdia quelen), propondo a elucidação do mecanismo termo-induzido da estrutura do gel formado. Determinou-se o comportamento da proteína do surimi a partir do estudo de quatro sistemas de tratamentos térmicos (pré-aquecimento a 60°C durante 30, 45 e 60 min + 90°C, 15 min e aquecimento direto a 90°C, 15 min) e da influência de diferentes aditivos protéicos (soroalbumina bovina (BSA) a a2-macroglobulina e clara de ovo) nas características do gel. A utilização de aditivos protéicos em géis submetidos a 90°C, 15 min, proporcionou maior força de gel (p<0,05) e coesividade em relação ao pré-aquecimento. O mesmo comportamento foi observado em relação ao controle, mesmo sob a temperatura de 60°C durante 60 min, demonstrando sua contribuição para a estabilidade térmica da proteína. As alterações no conteúdo sulfidrílico dos géis sugerem que a geleificação térmica do surimi de Jundiá está associada com a quantidade e formação de pontes dissulfeto, pois os tratamentos com menor conteúdo SH (aquecimento a 90°C, 15 min) mostraram maior força de gel. Já as amostras pré-aquecidas a 60°C apresentaram maior conteúdo SH e menor força de gel, característica dos géis com o fenômeno modori.
ResumoNeste estudo foram analisados a composição química e em ácidos graxos de traíra (Hoplias malabaricus) e do pintadinho (sem classificação), oriundos do Canal São Gonçalo, região Sul do Rio Grande do Sul (Brasil) e da barragem Índia Morta, Velasquez (Departamento de Rocha -Uruguai). As espécies demonstraram apresentar influência do local de captura em suas composições proximais. As traíras capturadas na Índia Morta apresentaram um conteúdo significativamente (P < 0,05) inferior de umidade (78,65%) e teor significativamente superior de gorduras (4,72%) do que as traíras capturadas no Canal São Gonçalo. Os pintadinhos do São Gonçalo apresentaram maior teor de umidade (82,39%) e menor teor de proteínas (14,18%) do que as amostras oriundas da Índia Morta. A composição em ácidos graxos também foi influenciada pelo local de captura. O pintadinho capturado no São Gonçalo apresentou maior conteúdo em ácidos graxos insaturados. A traíra capturada da Índia Morta apresentou maior proporção em ácidos graxos insaturados em relação à traíra capturada no São Gonçalo. Tanto as traíras quanto os pintadinhos apresentara alto conteúdo dos ácidos graxos palmítico (16:0) e oléico (C18:1). Todas as amostras analisadas demonstraram ser excelentes fontes de ácidos graxos poliinsaturados, incluindo a presença dos ácidos graxos linoléico (C18:2) e linolênico (C18:3). Resumo -O objetivo deste trabalho foi avaliar as características reológicas e físico-químicas da gelificação térmica do surimi de jundiá (Rhamdia quelen). Utilizaram-se quatro tratamentos térmicos, três estágios duplos -pré-aquecimentos a 60 o C durante 30, 45 e 60 min, seguidos de aquecimento a 90 o C por 15 min, e um único aquecimento direto a 90 o C por 15 min -e três formulações: duas com inibidores protéicos -soroalbumina bovina + alfa 2 -macroglobulina e clara de ovo -e uma sem inibidores. Amostras com inibidores protéicos e aquecimento direto alcançaram melhor gelificação, pelo incremento no módulo de elasticidade e decréscimo no ângulo de fase. Os géis pré-aquecidos apresentaram grande oscilação dos parâmetros viscoelásticos, o que comprometeu a formação da rede protéica tridimensional, formada durante a gelificação térmica do surimi. Rheological and physicochemical evaluation of thermal gelling of surimi from silver catfishAbstract -The objective of this work was to evaluate the rheological and physicochemical properties of thermal gelling of surimi from silver catfish (Rhamdia quelen). Four heating treatments were used: one-step heating at 90 o C, for 15 min, was compared with three two-step treatments with pre-heating at 60 o C for 30, 45 and 60 min, followed by heating at 90 o C for 15 min. Each heat treatment was used on three formulations: two with protease inhibitors (bovine serum albumin + alpha 2 -macroglobulin and egg white) and a formulation without inhibitors. Samples with inhibitors and one-step heating reached better gelling, by an increase in the storage modulus and a decrease in phase angle. Pre-heated gels had large variation in viscoelastic parameters which interfered with the establishment of the protein network during thermal gelling of surimi. The soluble peptides concentrations did not change significantly, even when two-step heating was carried out, which indicates absence of proteolysis, besides showing protein network protection by inhibitors.Index terms: Rhamdia quelen, protease inhibitors, protein network, soluble peptides, viscoelastic properties.
