Esta investigación pretende dar un valor agregado a los desechos de plumas de la industria de cría y beneficio de aves obteniendo queratina por medio de hidrólisis enzimática. La hidrólisis se llevó a cabo con la enzima Blue G, un diseño experimental de tipo central compuesto, tomando como factores el pH (8 a 9), temperatura (20 °C a 30 °C) y dosis de enzima (0.03 g a 0.05 g), y como respuesta la concentración de proteína en el extracto empleando para ello el método de Bradford y electroforesis en gel SDS-PAGE para conocer la pureza. Los resultados se estudiaron por un análisis de varianza y por la metodología superficie de respuesta obteniendo a un pH de 8 y temperatura de 25°C una concentración máxima de 2,106 mg/ml que corresponde a un porcentaje de masa de 8,42 siendo el pH y la temperatura (°C) los factores significativos de la hidrólisis.
