The objective of this research was to estimate the processing effect on mycotoxins levels and the exposure to zearalenone (ZEA), ochratoxin (OTA) and aflatoxin B1 (AFB1) through the consumption of pasta and bakery products. The higher reduction percentage of mycotoxins was observed in cake production (95, 90 and 70% for ZEA, OTA and AFB1, respectively). Bread and biscuit showed similar reduction in mycotoxins levels (89 and 90% for ZEA; 80 and 85% for OTA; 36 and 40% for AFB1, respectively). The lower reduction in the levels of mycotoxins has been observed for pasta (75, 65 and 10% for ZEA, OTA and AFB1, respectively). The consumption of these products could represent 12.6% of the maximum tolerable daily intake of ZEA and 30.5% of the tolerable weekly intake of OTA. The margin of exposure value related to the exposure to AFB1 was 24.6. The exposure to ZEA and OTA through the consumption of bakery products and pasta would not represent risk for consumer health, (although conjugated forms were not determined). However, the exposure to AFB1 represents a risk (even without considering the AFB1-conjugated forms).
This study aimed to evaluate the occurrence of gluten contamination in naturally gluten-free meals from food services in the Federal District, Brazil. This is an exploratory cross-sectional quantitative study in which a total of 180 samples of naturally gluten-free dishes were collected from 60 food services in Brazil. The enzyme-linked immunosorbent assay was used for the quantification of gluten. As established by the Codex Alimentarius, the threshold of 20 ppm of gluten was considered as the accepted upper gluten level for gluten-free food. A total of 2.8% (95% CI: 0.3–5.2%) gluten contamination was found in the samples. Among the 60 food services, 6.7% (95% CI: 2.7–10.6%) displayed at least one contaminated food in our sample. The occurrence of gluten contamination in naturally gluten-free preparations was uncommon and low on a quantitative basis.
RESUMO: O estúdio de projeto, uma das estratégias pioneiras do ensino centrado no aluno, é muito empregado nas disciplinas que abordam o projeto arquitetônico nos cursos de Arquitetura. Contudo, nas disciplinas da área de Tecnologia, em geral, o ensino continua sendo centrado no docente. Dentre as estratégias centradas nos alunos destaca-se a Abordagem Baseada em Problemas (ABP), que se caracteriza pelo uso de situações-problema relacionadas à prática profissional no processo de ensino-aprendizagem. Este artigo objetiva avaliar o uso da ABP em uma disciplina voltada para o projeto dos sistemas prediais hidráulicos e sanitários do curso de Arquitetura. A avaliação da aplicação foi efetuada por meio de entrevista coletiva e questionários individuais aplicados aos alunos e docentes. Os resultados obtidos indicam que as situações-problema facilitaram a aprendizagem e aproximaram os alunos da prática profissional. Contudo, verificou-se um aumento da carga de trabalho, tanto dos alunos quanto dos docentes, o que pode se constituir em um entrave para a sua maior disseminação.

RESUMOA abordagem baseada em problemas (ABP) se caracteriza pelo uso de situações reais para estimular a aquisição dos fundamentos dos conteúdos técnicos da área estudada e o desenvolvimento do pensamento crítico e das habilidades para solucionar problemas. Esta tese tem como objetivo propor diretrizes para a aplicação da ABP nas disciplinas de projeto dos sistemas prediais hidráulicos e sanitários (SPHS) do curso de graduação em Engenharia Civil. Para tanto, foi desenvolvido um mapeamento sistemático da literatura, que resultou em uma classificação dos estudos levantados segundo o nível de aplicação e na coleta de evidências das vantagens e dificuldades para a implementação da ABP em disciplinas da Engenharia Civil. Em paralelo, foi desenvolvida uma pesquisa-ação (PA) em duas disciplinas que abordam o projetos dos SPHS, em conjunto com um levantamento junto a docentes de outras instituições de ensino superior brasileiras (IES).
