El objetivo de esta investigación fue valorar el nivel de inclusión de harina de aguacate (HA) 0, 5 y 10% en la alimentación de cerdos por 56 días antes del sacrificio a 109±4 kg, sobre efectos en la modulación de los lípidos, presencia de antioxidantes en el Longissimus dorsi y expresión de genes en los tejidos Longissimus dorsi e hígado. Se emplearon en cada dieta ocho cerdos machos de 55±3 kg de peso inicial, para compararlas bajo un diseño completamente al azar, con análisis de varianza y prueba de Tukey. Los niveles de actividad antioxidante ABTS y DPPH, compuestos fenólicos totales y γ-tocoferol incrementan linealmente con inclusión de HA en la dieta, disminuyendo grasa intramuscular. La HA influye en incrementar el perfil de ácidos grasos poliinsaturados y la expresión de genes involucrados en el metabolismo de lípidos. La expresión alta en HA5 de genes lipogénicos (ACP, ACACA y FASN) se puede asociar al aumento de araquidónico (20:4 n6) y eicosapentanoico (20:3 n3), mientras que la esterificación de ácidos grasos (SCD) se puede asociar a la disminución de esteárico (18:0) y aumento de mayor relación 18:1/18:0 (9.66). Respecto a HA10 SREBP1 fue mayor en Longissimus dorsi, disminuyendo palmítico (16:0); aumentando: araquídico (20:0), linoleico (18:2 n6), PUFA, PUFA/SFA y PUFA/MUFA. Con HA5 aumenta el contenido de expresión de ACP, ACACA, FASN y SCD en ambos tejidos, siendo mayor en comparación con las dietas HA10.
