La piña (Ananas comosus) es un fruto tropical caracterizado por su contenido nutricional y humedad. Por ello, es necesario extender su vida útil a través del secado sin afectar sus propiedades nutricionales. El objetivo de la investigación fue determinar el efecto de las metodologías de secado: solar y por incubadora, sobre el contenido nutricional de rodajas de piña. Para ello, se realizó el análisis sensorial y fisicoquímico de muestras de piña fresca y seca. Las muestras secadas al sol tuvieron una humedad de 82,29%, 15,3 °brix, pH de 3,75 y 0,224 g/100 g de proteínas. Las concentraciones de micronutrientes (en mg/100 g de piña) fueron 28,20 para Ca, 8,50 para Mg, 3,96 para P y 140 en K. Después del secado se encontró afectación en las características sensoriales por pérdida de aroma, cambio de color, intensificación de sabor dulce y menor consistencia de pulpa. En el análisis de micronutrientes se observó diferencias significativas en los micronutrientes para ambos métodos. El contenido de calcio y potasio fueron mayores después del secado en incubadora y el contenido de magnesio y fósforo fueron mayores para el secado solar. Los resultados indican que las características de calidad fueron mejores tras el secado en incubadora.
There are several factors that generate postharvest losses of Citrus sinensis, but none have been focused on the central jungle of the Junín region of Peru. The objective of this research was to evaluate postharvest losses of Citrus sinensis in the province of Satipo, Junín region of Peru, considering the stages of the production chain. The methodology was applied to descriptive and cross-sectional design. A sample of 10 orange trees, 3 transport intermediaries and 5 traders selected for compliance with minimum volume and quality requirements were used. The °Brix, pH and acidity characteristics of the fruit were determined. Subsequently, absolute and percentage losses were quantified through direct observation, surveys and interviews. The main postharvest losses of Citrus sinensis were 1.50% in harvesting and detaching, 1.75% in transport to the collection center, 2.23% in storage and transport by intermediaries, and 2.90% in storage and sale by retailers. The overall loss was 8.12% throughout the production chain and US$5.75 per MT of C. sinensis harvested. The main damages found were mechanical and biological, caused by poor harvesting and packaging techniques, precarious storage and careless transport of the merchandise.
Esta investigación buscó evaluar tres tiempos de fermentación 0, 24, 48 y 72 hrs en la calidad del café de variedad Catimor con proceso Honey. El trabajo se realizó en campo y laboratorio. Las variables evaluadas fueron organolépticas, físicas y microbiológicas. Los resultados muestran que el máximo puntaje de calidad alcanzado es 85,08 con fermentación de 72 hrs; luego con 48 hrs y con 24 hrs; el testigo con 0 hrs muestra menor puntaje; la calidad crece con el tiempo de fermentación en una curva parabólica de máximo a 120 hrs. El análisis de mohos indica que a 0 y 72 hrs hay mayor cantidad de UFC/g, mientras que a 24 y 48 hrs es menor. A 35,19 tiene menor cantidad. Según análisis físico a 0 y 72 hrs hay menor cantidad de humedad en granos; mientras que a 24 y 48 hrs es mayor y para llegar a 11% se requiere 61,2 hrs. Se concluye que las hrs de fermentación aumenta el porcentaje de rendimiento, variando de 72,9% con 0 hrs y a 76,37% con 72 hrs; el máximo se encuentra con 88,1 hrs.
