ARTÍCULO / ARTICLERESUMEN Desde un equipo interdisciplinario, hemos realizado una investigación diagnóstica con el objetivo de describir y analizar los consumos alimentarios de niños y niñas durante los recreos escolares, en escuelas primarias de gestión estatal de la Ciudad Autónoma de Buenos Aires. Los consumos alimentarios informales resultaron ser un fenómeno extendido -sin diferencias en la magnitud de acuerdo a la zona de la ciudad-, condicionado por ciertas características del entorno escolar: la existencia de kiosco, la oferta de comidas estructuradas, la presencia de bebederos funcionando en los patios o la oferta de frutas. Asimismo, estos consumos alimentarios varían de acuerdo al género, en estrecha relación con el tipo de actividades y juegos que niños y niñas llevan adelante durante los recreos. Estas actividades, a su vez, resultan condicionadas por las normas institucionales y los espacios físicos disponibles. A través de estas particularidades del entorno escolar, se realiza una educación alimentaria "oculta", que es necesario visibilizar y abordar en las acciones de promoción de la salud en el ámbito escolar.
Faced with the current obesity epidemic, this article problematizes the way the right to food is often circumscribed to situations of nutritional deficit. It is argued that the right to adequate food is violated in obesogenic environments and that protection of the right requires the establishment of measures to regulate advertising and marketing practices regarding ultra-processed products. The work suggests that the main barriers to the implementation of such measures are the strategies employed by Big Food; among these, strategies that have the scientific community as a target and/or means are highlighted. Certain basic underlying assumptions are identified in the discourse of health professionals that contribute to create a framework of legitimacy regarding the consumption of ultra-processed products. The adoption of an ethical position that is free of conflicts of interest is suggested, so as to advocate for needed regulatory measures of a statutory nature.
Objective To describe the characteristics of corporate sponsorship during the 21st International Congress of Nutrition provided by food companies, and to analyse the measures proposed by the organizers to deal with prospective conflicts of interest. Design Qualitative study based on participant observation and document analysis. Setting 21st International Congress of Nutrition, Buenos Aires, October 2017. Analysis The nutritional profile of the products advertised in the area of commercial exhibition was analysed according to the PAHO Nutrient Profile Model. The document analysis was based on the grounded theory to propose conceptual categories that organize the narratives on the aforementioned products. Results Large food corporations sponsoring the Congress advertised a selection of their products to health professionals and other participants attending the event. 92% of the exhibited food products were ultra-processed. 85% were high in added sugars, sodium, and/or saturated fats. Despite this unsuitable nutritional profile, narratives to endow ultra-processed products with a health halo were developed through three thematic axes: fortification with micro-nutrients, reformulation of products and symbolic reconversion of snacks by creating a positive assessment and removing negative connotations. The measures adopted by the organization to deal with prospective conflicts of interests included space-time segmentation of activities and the requirement for the lecturers to submit a statement declaring their funding sources limited to each presentation. Space-time restrictions proved insufficient, and the declaration of funding sources was not a requirement for institutions organizing the symposia. Conclusions The influence of corporate sponsorship by food companies in the topics of scientific debate and dietary recommendations leads to questioning the efficacy of the measures adopted by the organizers to deal with the conflicts of interests. Said measures have been characterized as an institutionalized opacity policy. It is necessary to define stricter standards to prevent sponsorship from companies that commercialize unhealthy products and/or that advertise products in an unsuitable way.
OBJETIVOS: mostrar los resultados de la segunda encuesta antropométrica en embarazadas en Buenos Aires, Argentina. MÉTODOS: fueron medidas todas las embarazadas que concurrieron a control de salud durante una semana en los consultorios externos y centros de salud de las 12 maternidades públicas valorándose su peso, talla e índice de masa corporal (IMC). Se empleo una encuesta estructurada. RESULTADOS: fueron evaluadas 2811 embarazadas, nacidas en Argentina (49%) y en otros países (51%). Dentro de este segundo grupo, un 49% correspondió a mujeres nacidas en Bolivia (22%), Paraguay (19%) y Perú (8%). El problema nutricional más importante lo constituyó el exceso de peso con diferencias estadísticamente significativas según país de nacimiento. Se observaron dos curvas claramente diferenciadas en el IMC de embarazadas adolescentes y adultas. CONCLUSIONES: la investigación permitió obtener el perfil de estado nutricional durante la gestación empleando curvas nacionales de incremento del IMC ajustado por edad gestacional y observar el efecto de algunos determinantes sociales.
Introducción: La malnutrición por exceso es uno de los problemas de salud más prevalentes en escolares. Objetivos: describir el estado nutricional de una cohorte de niños/as que concurrieron a escuelas de gestión estatal de Ciudad de Buenos Aires, evaluados/as en 1º y 6º grado; analizar la prevalencia e incidencia de sobrepeso/obesidad y su asociación con sexo, zona, tipo de jornada escolar e intervenciones educativas del Programa Mi Escuela Saludable. Población y Métodos: estudio observacional, analítico, de cohorte retrospectivo. Se calculó el score z de IMC/edad y la diferencia de medias para muestras independientes. Se calcularon y compararon prevalencias mediante χ², p<0,05. Se realizó el cálculo de regresión logística bivariada (OR IC95%) para el análisis de incidencia. Resultados: Se incluyeron 3530 niños/as. La prevalencia de exceso de peso fue del 39,5% en 2012 y del 48,3% en 2017. La prevalencia de obesidad aumentó significativamente en varones (p=0,00) y en niños/as de escuelas de jornada simple sin intervención educativa (p=0,01). La incidencia de obesidad tuvo una tasa de 3,1% y fue mayor en varones y en zona sur. Conclusiones: Durante la escolaridad primaria, se agrava la malnutrición por exceso, por lo que se requieren urgentes modificaciones del entorno alimentario escolar.
