ResumenEn México la obesidad y la desnutrición son un grave problema de salud pública por lo que el rescate de cultivos nutritivos y superavitarios, como los es el del amaranto, surge como una alternativa para contribuir a mejorar la dieta alimenticia y favorecer la disminución de los problemas de malnutrición en el país. El amaranto, considerado como un cultivo con amplio potencial nutricional, tiene una baja importancia estadística como alimento, por lo que representa un claro ejemplo del potencial y la diversidad agrícola desaprovechada por las estrategias alimenticias. Es importante rescatar la producción local de amaranto, procurando que los actores de la dinámica agrícola de este cultivo posean las capacidades para impulsar su producción y consumo en aras de atender el problema de malnutrición (obesidad o desnutrición) y de seguridad alimentaria.
Territorial resources sustainability, especially those with a great linkage to local agronomic, social or cultural conditions, could be globally recognized through Protected Designations of Origin (PDO) figures, which emphasizes food qualities based on its origin. Nonetheless, a coherent analytical framework around this PDO’s sustainability, from a multidimensional perspective (economic, sociocultural and environmental), is needed. Therefore, the main objective of this paper is to propose an analytical framework based on coding principles of Grounded Theory, to operationalize sustainability’s three dimensions; this by performing a systematic literature review methodology under Preferred Reporting Items for Systematic Reviews and Meta-Analyses (PRISMA) method. From this screening process 21 papers were selected, and 27 theoretical revised codes were proposed to operationalize sustainability. The results showed that economic dimension had the highest weight on the sustainability matter, being “consumer’s behavior” code the most mentioned one; in second place “product’s identity” (a sociocultural code that reflects product’s territorial embeddedness) position itself, followed by “certifications to improve quality” (and environmental code). This results because PDO recognition is obtained through a certification process that guarantees the presence of certain socio-cultural elements and environmental qualities, turning food-goods into value-added items.
Los parques de bolsillo en la Ciudad de México se han instaurado como alternativas de recuperación de áreas, los cuales proponemos conceptualizar como espacios públicos subutilizados; esta investigación tiene como objetivo principal analizar el caso de tres parques de bolsillo a través de una metodología que integre la percepción que los usuarios tienen de los parques en cuestión de seguridad, infraestructura, mantenimiento y movilidad
En México, los mercados alimentarios forman parte de la tradición culinaria, social, cultural y económica del territorio. Sin embargo, recientemente estos mercados se han visto institucionalmente debilitados, poniendo en riesgo el patrimonio alimentario que representan. Esta investigación busca analizar los arreglos de gobernanza, vistos como articulaciones formales e informales entre actores sociales para la gestión de recursos territoriales, y materializables a través de estructuras organizacionales colectivas en mercados alimentarios, a fin de identificar la forma en como estos arreglos influyen en la conservación del patrimonio alimentario. El estudio de caso del “Mercado el 100” en la Ciudad de México se enriqueció con una encuesta aplicada a una decena de actores del mercado. Se rescata que este mercado tiene gran relevancia para la conservación del patrimonio alimentario especialmente en cuanto a: generar un sentido de pertenencia e identidad en los actores; reproducir tradiciones alimenticias; fortalecer la agricultura familiar y prácticas agroecológicas; influir en la promoción del patrimonio gastronómico, actividades educativas y turísticas. La organización, como acción e institución formal, continúa erigiéndose como un acierto al momento de buscar coordinar las acciones colectivas y la gobernanza de los recursos territoriales para la conservación del patrimonio alimentario.
Objetivo: analizar la forma en la que la innovación social (materializada en la organización de mujeres productoras de cacao) y los procesos de gobernanza territorial abonan al rescate de elementos sociales e identitarios del cacao. Lo mismo para la valorización de la participación femenina en la agricultura y a la búsqueda de alternativas para mejorar las condiciones de vida de estos actores en la región de Chontalpa en Tabasco, México. Metodología: se utilizó estudio de estudio de caso tomando como ejemplo a dos organizaciones de mujeres productoras de cacao, ambas lideradas y constituidas por mujeres originarias de la región de Grijalva en Tabasco. Los estudios de caso se conformaron a través de una decena de entrevistas semiestructuradas realizadas a finales de 2019 tanto a productoras líderes como a diversas colaboradoras dentro de las organizaciones estudiadas. Resultados: las organizaciones productivas lideradas por mujeres son estrategias de innovación social que han tenido como resultado la agregación de valor al cultivo del cacao, el fortalecimiento de mecanismo colectivos de toma de decisión y la revalorización del trabajo y liderazgo femenino en el sector agroalimentario. Limitaciones: es necesario un análisis que incluya a más organizaciones lideradas por mujeres productoras de cacao en la región, y que permita conocer con mayor profundidad la relevancia que estas innovaciones sociales tienen para el territorio. Conclusión: estos casos de estudio representan fenómenos sociales y económicos que permiten poner en práctica el concepto de innovación social y en donde es posible identificar aquellos elementos y factores que impulsan vínculos de cooperación para la toma de decisiones y cooperación productiva que contribuye a mejorar las condiciones de las mujeres en las localidades agrícolas.
