O objetivo deste estudo foi utilizar o Infravermelho com Transformada de Fourier-Reflectância Total Atenuada (FTIR-ATR) combinado com as Redes Neurais Artificiais para identificar e classificar a origem de queijos com base no perfil peptídico. Os peptídeos foram extraídos de queijos Coalho coletados de diferentes regiões da Bahia-Brasil, oriundos de sete laticínios distintos. As amostras foram analisadas no equipamento FTIR-ATR e 18 bandas principais foram observadas nos espectros obtidos. Foi aplicada a ferramenta quimiométrica RNA para análise multivariada dos dados. Foram observadas cinco principais regiões espectrais dos peptídeos referentes às amidas A, B, I, II e III, regiões que foram utilizadas para a classificação das amostras. Com a associação do FTIR-ATR ao RNA observou-se uma classificação satisfatória das amostras, principalmente dos peptídeos dos queijos oriundos do Extremo Oeste e Sul, que possuem características edafoclimáticas distintas e apresentaram maior e menor absorção espectroscópica, respectivamente, sendo obtidas taxas de classificação de até 100% na etapa de validação e RMSE=0,0048. Assim, a associação do RNA com o FTIR-ATR podem ser úteis para discriminar queijos Coalho de diferentes origens, além disso, demonstraram ser ferramentas analíticas rápidas e valiosas na diferenciação e na investigação da origem de queijos, podendo ambos serem usados como um método de triagem eficiente para autenticação destes produtos
