Celem niniejszej pracy było określenie zawartości wybranych substancji (sucha substancja, popiół, azot α-aminowy, cukry redukujące) w korzeniach buraka cukrowego uprawianego metodą tradycyjną, konserwującą i zerową z zastosowaniem dwóch poziomów ochrony herbicydowej. Ścisłe doświadczenie polowe realizowano w latach 2004–2007 w Stacji Hodowli Roślin w Straszkowie, gmina Kłodawa. Stwierdzono, że poziom ochrony herbicydowej istotnie wpływał na zawartość cukrów redukujących w korzeniach buraka cukrowego, powodując ich wzrost przy zredukowanej ochronie roślin. Systemy uprawy istotnie różnicowały zawartość popiołu oraz azotu α-aminowego w korzeniach buraka cukrowego. Spośród porównywanych systemów uprawy konserwującej najwięcej popiołu stwierdzono w korzeniach buraka uprawianego na poletkach z międzyplonem ścierniskowym. Natomiast najmniejszą zawartością azotu α-aminowego charakteryzowały się korzenie uprawiane na słomie wymieszanej kultywatorem i w uprawie zerowej. Najlepszą jakością technologiczną charakteryzowały się korzenie zebrane z uprawy zerowej oraz chronione intensywnie. Najwięcej azotu α-aminowego zawierały korzenie uprawiane na słomie przedplonowej i międzyplonie ścierniskowym pozostawionym do wiosny oraz chronione intensywnie.
