Sorghum cultivare exhibiting both resistance and susceptibility to grain mold were subjected to a variety of assays for polyphenols including flavan-4-ols and proanthocyanidins. In methanol and acidified methanol extracts of grains of mold-resistant cultivare, the levels of flavan-4-ols were two-to threefold higher than in mold-susceptible cultivare. Similar results were noted when the leaves of resistant and susceptible cultivare grown under greenhouse conditions were harvested at different stages of growth and analyzed for flavan-4-ols.
