Para atender as necessidades mundiais de alimentação e proteção ambiental, métodos alternativos de obtenção de alimentos estão sendo estudados, como o uso de ingredientes naturais e/ou bioativos para enriquecer formulações. A microalga Spirulina vem sendo considerada matéria-prima com grande potencial, pois sem fornecer riscos à saúde, apresenta, em sua composição proteínas, aminoácidos essenciais, minerais e vitaminas e sua incorporação em alimentos tem resultado no incremento nutricional. Dessa forma, a produção de biomassa de Spirulina pode ser uma alternativa para a alimentação humana, contendo não só um elevado conteúdo proteico, como também propriedades funcionais e fácil digestão. O Laboratório de Engenharia Bioquímica (LEB), situado na Universidade Federal do Rio Grande (FURG), tem desenvolvido projetos com o objetivo de fomentar a produção de biomassa de microalga Spirulina para uso no enriquecimento de alimentos. O presente trabalho teve por objetivo realizar uma revisão exploratória, na qual foi avaliada a composição dos alimentos enriquecidos com biomassa de Spirulina desenvolvidos pelo grupo de pesquisa do LEB e parceiros de projeto, destacando a contribuição da biomassa microalgal na suplementação alimentar e, mutuamente, seu impacto na segurança alimentar. Todos os estudos abordados pela presente pesquisa reportaram o acréscimo de conteúdo nutricional dos alimentos suplementados com biomassa de Spirulina. Dessa forma, produtos adicionados com Spirulina são uma opção para melhorar a saúde nutricional da população e garantir sua segurança alimentar e nutricional. Sugere-se a realização de estudos para definir o impacto econômico e sobre os benefícios funcionais da adição da biomassa nos alimentos.
