This is an extensive study of the three classical fermentation systems (emerged, submerged and solid‐state fermentations), thus uncovering, a system that is an intrinsically concomitant overlap of submerged and solid‐state fermentations – slurry fermentation. It is a convenient method of fermentation with hardly any theoretical characterization. This paper details the specifics of this system and its potential fields of application.
Die Kriterien zur Charakterisierung der klassischen Fermentationsprozesse Submers‐, Emers‐ und Solid‐State‐Fermentation reichen nicht aus, um alle Fermentationsarten hinreichend beschreiben zu können. Erste Ansätze der Etablierung der Slurry‐Fermentation als eigenständiges Fermentationsystem bedürfen jedoch der theoretischen Durchdringung. Dies erfolgt auf der Grundlage der Beschreibung der Slurry als disperses System und mittels der Stofftransport‐Charakterisierung. Die Slurry wird als zweiphasiges, monodisperses System aufgefasst, bei der die kontinuierliche Phase flüssig ist. Bedingt durch die hohe Suspensionsviskosität ist der konvektive Stofftransport einschränkt und geht gegen Null. Der Stofftransport ist jedoch bei einer Slurry sowohl durch Diffusion als auch durch Konvektion zu charakterisieren. Man unterscheidet drei Fälle der Slurry‐Fermentation: (1) niedriger Volumenbruch, hohe Suspensionsviskosität, diffusiver Stofftransport; (2) hoher Volumenbruch, hohe Suspensionsviskosität, diffusiver Stofftransport und (3) hoher Volumenbruch, hohe Suspensionsviskosität, mikrokonvektiver Stofftransport.
