Der Kgl. Schwedischen Landwirtschaftsdirektion, von welcher wit den Auftrag erhalten hatten, die Frage nach geeigneten Met~oden zur Untersuchung von Butter hinsichflich einer Beimischung yon fremdem Fett, besonders ~on Cocosfett, einer eingehenden ErSrterung zu unterwerfen, haben wir im verflossenen Juli einen umfangreichen Bericht fiber die ausgefiihrten Versuche erstattet 1), deren wichtigste Ergebnisse wir bier mitteilen. An diesen Versuehen sind noch beteiligt gewesen Ing. T h. S u n d berg: vom Laboratorium des Gesundheitsamtes der Stadt Stockholm, und :N. Bengtsson, Assistent an der Zentralanstalt ffir landwirtschaftliches Versuchswesen in Experimentalfiiltet. Die Methoden, die wir einer genauen Priifung unterzogen haben, sind die Refraktometermethode, die Bestimmung der Polenske'schen Zahl (in Verbindung mit der Reichert-Meil~l'schen Zahl), sowie B5mer's Phytosterinacetatprobe, da dies die Methoden sind, die sieh gegenw~rtig zu praktischen Zwecken am besten eignen. Ehe man zu einer dieser Methoden greift, mul~ natiirlich als erste Vorprobe die SesamSlreaktion (die B a u d o u i n 'sche Reaktion) ausgeffihrt werden. :Nach der schwedischen Margarineverordnung vom 13. Oktober 1905 mug in aller schwedischen Margarine ein Zusatz yon SesamS1 enthalten sein, welcher mindestens 10 ~/o der bei ~ der I-Ierstellung der Margarine angewandten Fettarten und PflanzenSle ausmacht. S/imtliehe yon uns im Handel eingekauften Proben yon Pflanzenmargarine und ge-w5hnlieher (tierischer) Margarine gaben die Baudouin'sche Reaktion. Um festzustellen, eine wie geringe Beimisehung von Margarine zur Butter sich mit Hilfe der SesamSlreaktion nachweisen 1/iSt, wurden Mischungen yon einer und derselben Butter mit 5 bis 40 ~o Pflanzenmargarine aus 5 versehiedenen Fabriken hergestellt. Die Butter wurde auch ffir sich untersucht; sie gab natfirlich keine Reaktion. Die Ergebnisse dieser Untersuchungen gehen aus Tabelle I hervor. Tabelle I.
