ResumoDoenças Transmitidas por Alimentos (DTA) estão associadas ao consumo de alimentos e água contaminados por microrganismos patogênicos, sendo alguns desses grupos utilizados como indicadores dos cuidados higiênico-sanitários e empregados nos produtos de origem animal (POA). O objetivo foi avaliar a qualidade higiênico-sanitária dos POA encaminhados para alimentação escolar no município de Pelotas, Rio Grande do Sul, Brasil. As coletas foram realizadas no posto de distribuição da Secretaria de Educação. Foram coletadas cinco amostras de todos os lotes de leite UHT, bebida láctea e filés de frango que deram entrada no período de onze meses, totalizando cinquenta e cinco amostras. Os produtos foram avaliados quanto aos padrões microbiológicos da Agência Nacional de Vigilância Sanitária (ANVISA). Além dessas análises foram realizadas pesquisa da presença de Campylobacter e de Salmonella nos produtos de frango. Foi aplicada uma lista de verificação das boas práticas de armazenamento. Todas as amostras estavam dentro dos padrões microbiológicos admitidos pela ANVISA, entretanto Salmonella foi detectada em quatro amostras de filés de frango. Campylobacter não foi isolado de nenhuma amostra. As condições de armazenamento foram consideradas ruins, apresentando 72,4% de não conformidades, especialmente nos quesitos temperatura e condições de armazenamento. The presence of contaminated animals in wildlife rehabilitation centers poses a threat for both animals and humans that come into contact with them or the contaminated environment. The aim of this study was to assess the presence of Staphylococcus aureus, including methicillin-resistant S. aureus (MRSA), as well as studying the biofilm formation capacity of these isolates, Yersinia enterocolitica, Salmonella enterica and Campylobacter spp. in wild animals from a rehabilitation center. During a two-year period, feces were collected from animals that were admitted to a wildlife rehabilitation center (n=324 samples). The pathogens were isolated from 51 (15.7%) animals of different species of mammals, birds and reptiles. Forty isolates (12.3%) were identified as S. aureus, of these, 32 (9.9%) were identified as MRSA and 72.5% were able to form biofilm. Y. enterocolitica was found in five mammals (5.1%), three reptiles (21.43%) and two birds (0.94%). Salmonella and Campylobacter were isolated from one bird each (0.67% and 0.67%, respectively). A wide diversity of animal species in rehabilitation centers, including birds, mammals and reptiles, can carry MRSA and enterobacteria of one health concern and eliminate in the feces. The presence of these pathogens in the gastrointestinal tract of wild animals admitted to a wildlife rehabilitation center shows the importance of microbiological monitoring of animals at the time of their admission and reinforces the need for specific hygienic-sanitary care.

The objective of this study was to characterize the genotype and phenotype of S. aureus isolates from pork sausages. Fifty samples of pork sausages were collected, counts of coagulase-positive Staphylococcus were made and isolates were obtained to identify S. aureus species. In the isolates, the presence of genes sea, seb, sec, and sed was surveyed, the methicillin-resistance was assessed and the production of biofilm in Congo red agar, stainless steel, polyethylene, glass, and pork casing was tested. The capacity of biofilm formation was assessed after the exposure to sublethal stress. Of the samples tested, 12% had counts superior to what is permitted by the legislation. S. aureus was isolated in 44% of the samples. Of these, 54% had only the gene sed and 32% had genes sec and sed, 73% were classified as methicillin-resistant S. aureus (MRSA). Of the MRSA isolates, 62% had only gene sed and 35% had both genes found in this study. Regarding the biofilm formation in Congo red agar, 68% of S. aureus isolates were considered as biofilm formers. After undergoing the sublethal stress, most of the biofilm former isolates proceeded to form biofilm and the non-biofilm former isolates responded in a distinct manner. The condition in which the sublethal stress greatly induced the biofilm formation was the cold. Biofilm production was observed only in the stainless steel and pork casing in 71% and 57% of the isolates tested, respectively. Thus, we stress the importance of implementing good manufacturing practices within the industry to control microbial contamination and biofilm formation.

O presente estudo teve como objetivo avaliar a ocorrência de Campylobacter jejuni, Campylobacter coli e Salmonella enterica em vacas leiteiras e salas de ordenha de fazendas leiteiras no sul do Brasil. Foram coletadas amostras de 12 fazendas leiteiras localizadas no sul do Rio Grande do Sul. Durante as visitas às propriedades, foram coletadas amostras da água utilizada na sala de ordenha, dos insufladores das ordenhadeiras mecânicas, da superfície interna dos baldes de leite ou da parede da tubulação, das mãos dos manipuladores e do leite de conjunto foram coletadas para as análises microbiológicas. Também foram coletadas amostras de fezes de cinco vacas em produção, as quais também foram avaliadas quanto à presença de Campylobacter e Salmonella, totalizando 10 amostras em cada fazenda leiteira. Não houve o isolamento de Salmonella em nenhuma das amostras que foram analisadas. Campylobacter foi isolado de três amostras (3/60; 0,05%) de fezes de vacas de uma mesma propriedade, sendo um dos isolados identificado como C. jejuni, esse isolado apresentou o gene cdt que codifica para a toxina citoletal distensiva. Conclui-se com o estudo que Campylobacter sp. pode ser encontrado em bovinos leiteiros em processo de ordenha, podendo oferecer risco de transmissão desse micro-organismo pelo contato direto ou indireto com as fezes dos animais contaminados.
