RESUMOO pacu (Piaractus mesopotamicus) é uma espécie nativa que apresenta crescimento rápido, boa aceitação sensorial e é considerado um símbolo da culinária de Mato Grosso, sendo amplamente comercializado fresco, congelado e salgado-seco. O objetivo deste trabalho foi avaliar as condições higiênico-sanitárias do pacu salgado-seco comercializado em Cuiabá-MT. Para tanto, 30 amostras foram adquiridas nos meses de setembro e novembro de 2017, compreendendo período de seca e chuva respectivamente. As análises realizadas foram: coliformes totais e termotolerantes, estafilococos coagulase positiva, Salmonella spp., bactérias halofílicas, bactérias heterotróficas aeróbias mesófilas, fungos filamentosos e leveduras, e pesquisa de parasitos. Houve diferença significativa (p<0,05) entre o período de seca e chuva para as contagens de coliformes totais (CT) e Estafilococos coagulase positiva (ES). As contagens médias encontradas para CT foram de 2,51 e 2,99 log UFC/g e para ES 3,71 e 4,55 log UFC/g para o período de seca e chuva respectivamente. Em 100% das amostras não foi observado crescimento de coliformes termotolerantes. Quanto as bactérias halofílicas, mesófilas, fungos filamentosos e leveduras, não houve diferença (p>0,05) entre o período de seca e chuva e as médias das contagens foram de 4,86, 5,34 e 4,78 log UFC/g respectivamente. Em nenhuma amostra avaliada foi detectada presenças de Salmonella spp. e parasitos. Com base nos resultados obtidos pode-se afirmar que o produto está improprio para o consumo, visto que as contagens de Estafilococos coagulase positiva excedem o preconizado pela RDC nº 12, legislação vigente no período de realização do trabalho em questão. No entanto, de acordo com a legislação atual, Instrução Normativa n. 60, de 23 de dezembro de 2019, os produtos seriam considerados aptos ao consumo, uma vez que, a mesma exclui a análise de Estafilococos coagulase positiva em produtos salgado seco.
