The aims of this study were as follows: to assess the changes that occur in sugar‐free guava (Psidium guajava) jam with added prebiotics during 180 days of storage and to investigate the influence of opaque and transparent packages on the stability of this jam during storage through microbiological, physical, chemical and physicochemical analyses. The packaging influenced the a*, b* and L* color parameters, and the transparent packaging had the greatest loss of brightness and lowest intensity levels of red color when compared with the opaque packaging. The length of storage time significantly affected all variables (color, syneresis, water activity, fructooligosaccharide concentration, titratable acidity and pH). The microbiological quality of the sugar‐free guava jam with added prebiotics in both packaging types was maintained for 180 days. PRACTICAL APPLICATIONS The work presented also the creation of healthy and nutritious desserts, combining the taste of marmalade traditional functionality of prebiotics. Nutrition and technology.
IntroduçãoO Brasil é um dos três maiores produtores mundiais de goiaba (Psidium guajava L.), sendo a cultivar Pedro Sato a preferida no mercado nacional (AZZOLINE et al., 2005). Constitui-se em um dos frutos de maior importância nas regiões subtropicais e tropicais, não só devido ao seu elevado valor nutritivo, mas pela excelente aceitação do consumo in natura, pela sua grande aplicação industrial, como também porque pode se desenvolver em condições adversas de clima (GONGATTI NETTO; GARCIA; ARDITO, 1996). Em termos de mercado brasileiro a goiabada ou doce em massa de goiaba é um dos produtos industrializados de fruta mais consumidos pela classe média baixa e pela faixa de menor poder aquisitivo da sociedade (PEÇANHA et al., 2006). A goiabada ou doce em massa de goiaba deve ter cor característica do produto, variando de vermelho amarelado a vermelho amarronzado, odor e sabor característicos lembrando a goiaba, aparência gelatinosa e sólida, permitindo corte (MORI; YOTSUANAGI; FERREIRA, 1998).Os doces em massa são resultantes do processamento adequado das partes comestíveis dos vegetais, adicionados de açúcares, água, pectina (0,5 a 1,5% em relação à polpa), ajustador de pH (3 a 3,4), além de outros ingredientes e aditivos permitidos até alcançar a consistência adequada, assegurando estabilidade ao produto. Após o processamento, os doces devem ser devidamente embalados e armazenados em condições ambientais (JACKIX, 1988; ABIA, 2001). The objective of the present study was to verify the effects of potassium sorbate and citric acid concentrations and the pulp:sugar ratio on the physical and physicochemical characteristics of guava preserve formulations. A complete 2 3 factorial design was used with 3 central points. Linear models were fitted to describe the responses as a function of the significant factors. The results showed that the potassium sorbate concentration had little effect on the responses analysed, except for the pH. The pulp/sugar ratio and the citric acid concentration are the most relevant variables to this process. Purpose People are increasingly concerned about food and health and seek for functional and sugar-free products. However, there are technological challenges when adding functional components and substituting sugar in foods. Thus, the purpose of this paper is to evaluate the influence of packaging and storage time on the sensory profile of functional diet guava preserve added with prebiotics, supporting the development of functional and sugar-free products and contributing to the product variety in the market. Design/methodology/approach A two-factor full factorial design was conducted in triplications that evaluated transparent and opaque packaging vs storage time (six months). The products were stored in packages with different light permeability (transparent and opaque). Quantitative descriptive analysis (QDA) and acceptance tests were performed. Findings The packaging material did not affect the sensory changes of functional diet guava preserve during the six months of storage. QDA test showed that from three months of storage the original characteristics of the product were lost and a slight decrease in overall acceptance was observed after four and six months. However, during the six months the products had good acceptance; consequently, it was not possible to establish their rejection before this period. Research limitations/implications More detailed studies regarding a longer storage period, including the physical and chemical measurements must be done to clarify other points about the influence of packaging and storage time on the sensory profile of functional diet guava preserve added with prebiotics. Therefore, researchers are encouraged to test the proposed propositions further. Practical implications The development of a functional and sugar-free preserve is a good alternative to provide a product that meets the actual consumer desires and adds value to the product. However, there are technological challenges when adding functional components and substituting sugar in foods. Thus, this study provides important information for the development of sugar-free and functional products, and to prolong their shelf life. Originality/value There are few studies with respect to the sensory aspects during the storage of functional preserves. Thus, this work will aid future studies, supporting the development of functional and sugar-free products and contributing to the product variety in the market.
Doces em massa possuem prolongada vida de prateleira, aproximadamente 12 meses, quando armazenados em condições adequadas. No Brasil as condições de armazenamento são variáveis e a adição de conservantes é uma das técnicas mais utilizadas para ampliar a estabilidade. Devido à possibilidade da adição de conservantes induzir alterações nesses produtos, no presente trabalho foi analisada a estabilidade de doces em massa de banana prata, com e sem a adição de sorbato de potássio, durante o armazenamento, bem como os efeitos de variações de temperatura. A estabilidade das amostras de doces armazenadas foi avaliada pelo planejamento fatorial triplo com duas repetições, sendo os fatores analisados o sorbato de potássio (presença e ausência), a temperatura (20 °C, 30 °C e 40 °C) e o tempo de armazenamento (0, 30, 75, 120, 165 dias), por meio da determinação de sólidos solúveis, açúcares totais, redutores e não redutores, acidez, atividade de água, umidade, cor e textura. O tempo foi fator determinante nas alterações ocorridas. A temperatura de armazenamento influenciou todos os parâmetros, exceto a elasticidade e a adesividade. A presença do sorbato de potássio interferiu no teor de sólidos solúveis, na firmeza e na fraturabilidade e nos demais parâmetros com exceção da elasticidade, coesividade e teores de açúcares.
