Food insecurity and nutritional status of individuals in a socially vulnerable situation in BrazilInsegurança Alimentar e estado nutricional entre indivíduos em situação de vulnerabilidade social no Brasil
Objective -to analyze the educational intervention strategies based on the transtheoretical model, in restaurants employees Methodology -This work is an intervention study, based on the Attitude Change Scale for Food Handlers (ACSFH); and the check-list based on the RDC 216/2004. Both instruments were applied before and after the educational intervention. The study was conducted with 263 food handlers, in 12 Community Restaurants (CR) of the Federal District (Brazil).Results and Discussion -The internal consistency (Cronbach's α = 0.90) showed that the instruments were adequate. Of the 263 food handlers, 74.5% (n = 196) were female, 49.8% (n = 131) had elementary education and 77.6% (n = 204) were kitchen helpers. The attitude stage obtained from ACSFH in both moments of the instrument application were respectively 3.77 -Action stage and 4.06 -Maintenance, showing significant difference between the two time periods (p = 0.000). The results obtained from the check-lists before and after the intervention were rated as satisfactory according to Soto et al. (2009). Although rated as satisfactory, there was a statistic difference between them (p = 0.000). The results showed that after the education campaign there was a change for the best in the conception of good manufacturing practices (GMP). They also showed that the adoption of active methodologies associated with the diagnostic of propensity to change, based on the transtheoretical model, are efficient for practically all attitudes. These results can contribute to the adoption, in restaurants, of custom-made training strategies based on the results obtained from applying the transtheoretical model.
Nutritional status of children under five years old who attended an institutional nursery Resumo Objetivo: Avaliar o perfil nutricional de crianças menores de cinco anos que frequentaram um berçário institucional no Distrito Federal. Métodos: A amostra foi composta por crianças que frequentaram o berçário institucional entre março de 2010 e dezembro de 2013. Foram analisados dados socioeconômicos, ambientais, demográficos, biológicos e antropométricos de mães e crianças, e aplicado um Questionário de Frequência Alimentar para analisar o consumo alimentar infantil. Para avaliação da qualidade global da dieta, foi utilizado um escore baseado no Recommended Foods Score (Contagem de Alimentos Recomendados). Resultados: A amostra foi composta por 26 mães e 28 crianças. Quanto às mães, 67,9% estavam na faixa etária de 31 a 40 anos, 67,9% eram pós-graduadas, 85,7% recebiam mais de 10 salários, 75% eram casadas, 85,7% eram eutróficas e 14,3% com sobrepeso. A média de idade das crianças foi de 29,44 meses (± 14,18); 67,9% permaneceram em aleitamento materno exclusivo até seis meses e 50% foram desmamadas entre 12 e 15 meses; 88,9% das crianças estavam eutróficas e 11,1%, com risco de sobrepeso; 28,6% apresentaram consumo de açúcares e bebidas açucaradas acima da recomendação; 32,2%, consumo de frutas abaixo do recomendado e 67,9%, consumo de hortaliças abaixo do recomendado pela Sociedade Brasileira de Pediatria; 10,7% realizavam as refeições assistindo televisão quase sempre e 21,4%, nunca. A nota média da dieta foi 23,25 ± 2,31 pontos de um total de 28. Conclusão: A frequência a um berçário institucional pode contribuir de forma positiva para o estado nutricional e os hábitos alimentares da criança.
