The effect of cellulosic substrates on the production of extra-cellular cellulases and their cellulolytic activity inChaetomium globosum has been studied in shake flask cultures. Production of endoglucanase, exoglucanase and filter paper cellulase was highest with pure cellulose whereas β-glucosidase was maximally induced by wheat straw. A suitable pretreatment for wheat straw was peracetic acid followed by NaOH and that of bagasse with NaOH for saccharification.

The focus of this research was to analyze the yield, physico-chemical and nutritional quality of a cabinet dried tomato powder as affected by three (3) chemical treatments (KMS, CaCl2 and both). Dehydration process was carried out using a cabinet dryer at a constant air flow velocity of 0.7 m/s and air temperature in the range of 60-65oC based on preliminary tests by dipping in 0.2% (w/w) potassium metabisulphite (T1) and 1% (w/w) calcium chloride (T2) independently and 1% (w/w) calcium chloride (CaCl2) along with 0.2% (w/w) potassium metabisulphite (KMS) in water solution (T3) for 10 minutes. The effect of 3 pre-drying treatments on quality of cabinet dried tomato powder was analyzed by determining moisture content, rehydration ratio, total sugar, total acidity, fat, protein, ash, crude fiber, pH, total caroteniods, vitamin-C, minerals (calcium, iron, phosphorus) and sensory analysis. The results expressed that the treatment T3 achieved the highest yield of tomato powder (4.6 g/100 g). The control sample showed highest moisture content (6.9 g/100 g) and dipping in 1% CaCl2 along with 0.2% KMS presented the lowest moisture content (5.9 g/100 g). Sample T3 showed highest total sugar content (49.1 g/100 g). The study also depicted that the total carotenoids content in tomato powder was 0.21 mg/100 g which was lower than that of fresh tomato (2.1 mg/100 g). Micronutrients such as vitamin-C, Calcium, phosphorus and iron were found to be 35.30 mg/100 g, 336.72 mg/100 g, 105 mg/100g and 12.23 mg/100 g, respectively in case for T3 sample. Sensory analysis (color, texture, flavor and overall acceptability) of tomato powder was carried out by trained and untrained panelists and their interpretation was done by using statistical ANOVA Test. There was no significant difference between control and treated samples regarding to their texture, flavor and overall acceptability but significant difference was observed in case of color. A survey was conducted to know the present status of naturally occurring seaweed flora and their utilization in Bangladesh by interviews of scientific officers of MFTS (Marine Fisheries and Technology Station, Bangladesh Fisheries Research Institute, Cox’s Bazar), NGO officials associated with seaweed research project, local seaweed food products manufacturer, seaweed collectors and Mog or Rakhyine tribal community of Cox’s Bazar and St. Martin Island. Lack of knowledge on availability, distribution, seasonal variation, utilization status is causing impediment on utilization (e.g. seaweeds as human food, hydrocolloids, animal feed, fertilizer, cosmetic products, etc.) of available seaweeds naturally occurring in Bangladesh. Seaweeds are available along the whole Bangladeshi coast, mostly in St. Martin Island, Cox’s Bazar and Sundarbans Mangrove forest. Total 193seaweed species including 19 commercially important species, belonging to 94 genera are found. Approximately, 5,000 metric ton of seaweed biomass is available. Due to seasonal variation in water quality parameters, generally seaweeds are available from October to April, but highest abundance occurs from January to March. Seaweed salad and sauce has been utilizing by Mog people as food. About 400 seaweed collectors at St. Martin Island annually harvested 6-9 metric tons of wet seaweeds (Hypnea spp.) for smuggling to Myanmar. Different value added food, functional food and personal care products have prepared by Govt. institution, NGO and in private sector. Considering the economic importance and potentials of seaweeds, for effective and environmentally sustainable utilization, special concern is required by both government and private organizations.Res. Sun drying of fish is an important method of fish preservation throughout the world. Due to its availability and product specific flavor and texture, dried fish has become an important part in the diet of people living particularly in the coastal region of many Asian countries including Bangladesh. Product type is considerably wide depending on the season, availability of fish, infrastructure and technical know-how of the processors. These are mainly processed from marine fishes that are caught by the artisanal fishermen and marketed throughout the country by multistep marketing channel up to reaching to the consumer. Due to the importance of the product in terms of market volume as well as its major role in the socio-economic condition of millions of people of the country, the sector needs proper attention by appropriate authorities to ensure quality and safety of the product produced and marketed. In this paper, different methods of sun drying practiced traditionally in the coastal region of Bangladesh and associated marketing systems are reviewed. It is expected that training of processors on Sanitation Standard Operating Procedures and monitoring by appropriate government body would be necessary to improve quality and simultaneously ensure safety of sun-dried fish produced in the coastal region of Bangladesh.
