ВВЕДЕНИЕ Фенилкетонурия (ФКУ) -наследственное забо-левание, в основе которого лежит нарушение ами-нокислотного обмена, проявляющееся гиперфенил-аланинемией. С целью раннего выявления указанной патологии неонатальный скрининг на ФКУ в Россий-ской Федерации осуществляют с 80-х гг. прошлого столетия. В настоящее время охват обследованием новорожденных составляет около 99%. По данным неонатального скрининга за период 2008-2010 гг., частота ФКУ в различных регионах России колеблется от 1:4500 до 1:10 000 и в среднем составляет среди новорожденных 1:7697 (данные 2008 г.)-1:7027 (дан-ные 2010 г.). Из всех случаев гиперфенилаланинемии, выявленных по неонатальному скринингу, около 98% приходится на классические формы ФКУ, при которых имеет место нарушение функционирования фермента фенилаланин-4-гидроксилазы, участвующего в процес-се гидроксилирования фенилаланина и его преобразо-вания в тирозин.
Изучение влияния употребления кисломолочных продуктов (КМП) на организм человека тесно связано с именем И. И. Мечникова, который в 1907 г. в труде «Этюды оптимизма» представил результаты исследова-ния факторов долгожительства у балканских крестьян. Ученый сделал заключение о том, что долгая жизнь этих народов определенным образом связана с потреблением КМП. При этом было установлено, что замена гнилостных микробов кишечника, обладающих негативным воздей-ствием на организм человека, на молочнокислые микро-организмы значительно улучшает состояние здоровья [1].Вместе с тем история использования КМП в питании человека насчитывает несколько тысячелетий. Первые упоминания об употреблении ферментированного моло-ка относятся еще к VI в. до н. э. Древние народы Индии, Рима, Греции, Закавказья готовили КМП из коровьего или овечьего молока. Население разных стран владело уникальными рецептами приготовления сквашенного молока, используя при этом молоко домашних животных (коров, кобыл, овец, коз, верблюдиц и др.). Так, в России производили простоквашу и варенец; на Украине -ряженку; в Калмыкии, Башкортостане, Татарстане,
