Celem pracy była ocena składu chemicznego, zwłaszcza polienowych kwasów tłuszczowych, a także innych składników ważnych z punktu widzenia żywieniowego i stabilności oksydacyjnej, olejów roślinnych o wysokiej zawartości kwasów linolenowych. Badaniom poddano oleje roślinne: cztery oleje tłoczone na zimno-lniany, lniankowy, ogórecznikowy, żmijowcowy oraz jeden rafinowany-z nasion czarnej porzeczki. Oznaczano skład i zawartość: kwasów tłuszczowych, tokoferoli, fitosteroli oraz zawartość: karotenoidów, barwników chlorofilowych, a także żelaza i miedzi. Badane oleje charakteryzowały się szczególnie dużą zawartością kwasu linolenowego (lniany, lniankowy, żmijowcowy), γ-linolenowego (ogórecznikowy), a także stearydonowego (żmijowcowy). Niektóre z nich okazały się dobrym źródłem tokoferoli (z nasion czarnej porzeczki, ogórecznikowy), natomiast fitosterole nie występowały w nich w znaczących ilościach. W olejach tłoczonych na zimno stwierdzono podwyższoną zawartość barwników chlorofilowych oraz żelaza. Znaczna ilość polienowych kwasów tłuszczowych z rodziny n-3 (α-linolenowego i stearydonowego), a także kwasu γ-linolenowego w badanych olejach wskazuje na ich wyjątkowo wysoką wartość żywieniową i zdrowotną. Jednocześnie jednak wysoki stopień nienasycenia, a także podwyższony poziom chlorofili i żelaza mogą być czynnikami negatywnie wpływającymi na ich stabilność oksydatywną.

Dobrym źródłem kwasów z rodziny n-3 są oleje: lniany, żmijowcowy i lniankowy. Optymalna wzajemna proporcja (4 : 1) pomiędzy kwasami z rodziny n-6 i n-3 występuje w oleju z nasion czarnej porzeczki. Olej ogórecznikowy, żmijowcowy oraz olej z nasion czarnej porzeczki zawierają rzadko występujące, cenne pod względem żywieniowym kwasy tłuszczowe γ-linolenowy i stearydonowy. Olej z nasion czarnej porzeczki jest znaczącym źródłem witaminy E. Niski współczynnik Harrisa oleju lnianego, a także lniankowego, ogórecznikowego i żmijowcowego wskazuje na potrzebę ich wzbogacania w witaminę E. S t r e s z c z e n i e Celem pracy było wykazanie, czy i w jakim stopniu naturalne związki fenolowe występujące w nasionach stanowią barierę przeciwutleniającą dla wytłoczonych z nich na zimno olejów, bogatych w polienowe kwasy tłuszczowe z rodziny n-3.Materiał do badań stanowiły nasiona lnu, lnianki, konopi i żmijowca. Badaniom poddano oleje wytło-czone na zimno, oleje pozbawione natywnych związków fenolowych oraz oleje wzbogacone w hydrofobową frakcję związków fenolowych wyizolowanych z odolejonych nasion. Związki fenolowe ekstrahowano 70 % etanolem na gorąco, a surowy ekstrakt oczyszczano w układzie rozpuszczalników polarnych i niepolarnych.Nasiona charakteryzowały się zróżnicowaną zawartością związków fenolowych, które w niewielkich ilościach przenikały do oleju podczas tłoczenia na zimno. Usunięcie związków fenolowych z olejów skutkowało wyraźnym obniżeniem ich stabilności oksydacyjnej w teście Rancimat oraz aktywności antyrodnikowej względem rodnika DPPH. Dodatek hydrofobowych związków fenolowych wyizolowanych z nasion poprawiał stabilność oksydacyjną i potencjał antyrodnikowy wytłoczonych z nich olejów. Siła ochronna i antyrodnikowa polifenoli nie była jednak duża. Skuteczność działania tych związków była zróżnicowana w zależności od rodzaju oleju i stosowanej dawki. Najwyższy współczynnik ochronny (0,52) uzyskano w przypadku oleju żmijowcowego, przy zastosowaniu maksymalnej dawki 1500 ppm. Celem pracy było określenie wpływu wilgotności i rozdrobnienia nasion oraz stopnia dławienia masy nasiennej w prasie ślimakowej na wybrane parametry procesu tłoczenia i cechy jakościowe oleju lnianego. Badaniom poddano nasiona lnu wysokolinolenowej odmiany 'Bukoz'. Rozdrabnianie nasion wykonywano metodą płatkowania w dwuwalcowym młynie laboratoryjnym z gładkimi walcami. Oleje tłoczono w prasie ślimakowej UNO firmy Farmet. Stwierdzono, że wilgotność nasion, wielkość średnicy dyszy wylotowej prasy oraz płatkowanie nasion przed tłoczeniem wywierały istotny wpływ na parametry procesu tłoczenia i jakość oleju.
