Differential scanning calorimetry (DSC) was used to study the thermophysical properties of oils of amaranth, corn, flax, sunflower, rapeseed, milk thistle, camelina, and pumpkin seed, liquid at room temperature. The characteristic thermal effects of these oils (temperatures of the maxima of endothermic peaks and their areas in the DSC thermograms) were determined. Endothermic peaks of different intensities on the melting curves of liquid vegetable oils in the ranges from -40 to -15°C, from -25 to -8°C, from -19 to +6°C, and from -10 to +4 °C as identification factors are discussed. The coordinates of the maxima of these peaks on the abscissa axis (T i ) and their areas (S i ) significantly correlate with the concentrations of basic fatty acids and triacylglycerols (W i , %), determined by reversed-phase HPLC. We demonstrated that the authenticity of vegetable oils could be effectively controlled by DSC.
It is shown that the DSC method allows one to control the palm oil content in the milk fat both qualitatively and quantitatively. This method of palm oil identification as an additives in milk fat and allowing to determination of the amount of this additive by the DSC melting curves for milk fat and its mixtures is applicable for the range of 2÷30 mass percentage of the PO in the fat. The ratio of the temperature extremum of the melting curves and the peak area of milk fat endothermic effect are proposed as an analytical signal. It was found that the minimum temperature in the range of 9.1÷11.0 °C shifts towards higher temperature with an increase of PO additive in milk fat up to 50%, while the maximum temperature falls in the range of 13.2÷17.0 °C. The DSC method is more sensitive to changes in the triglyceride composition of fat than chromatographic methods.
The article discusses the basic and additional services of a lodging establishment, taking into account the requirements of the «Regulations on the Hotels Classification» on the example of a hotel in the city of Voronezh. According to the Federal Agency for Tourism, the volume of investments aimed at the development of collective accommodation facilities is increasing every year. The analysis of the room capacity of lodging establishments was carried out. Based on the analysis of the hotels in the city of Voronezh, the object of the study was chosen — the Sogdiana hotel. The hospitality industry is a complex, multiaspect area of professional activity of people whose efforts are aimed at meeting the diverse needs of customers (guests), both tourists and local residents.
