Dentro da versatilidade da soja (Glycine max) no campo da indústria de alimentos, são conhecidos e comercializados, além da soja em grãos, farinha de soja, concentrado e isolados de soja, alimentos fermentados como miso, shoyo, tempeh e análogos lácteos com soja, como as bebidas à base de leite, queijo e iogurte, que permitem a utilização do extrato de soja ao invés do leite de vaca. A utilização de bactérias ácido-láticas responsáveis pela fermentação da soja diminui as concentrações de oligossacarídeos presentes, reduzindo, deste modo, as causas de flatulência, melhorando o sabor e permitindo a elaboração de produtos com melhores níveis de aceitabilidade (BACHMANN, 2001).A soja destaca-se por apresentar aproximadamente 40% de proteínas de alta qualidade, 20% de lipídios com alta concentração de ácidos graxos poli-insaturados, cerca de 34% de carboidratos, minerais como fósforo, ferro, magnésio e zinco e teores consideráveis de vitaminas do complexo B (CARRÃo-PANIzzI, 2000), além de fornecer compostos fitoquímicos, como as isoflavonas, que possuem estrutura química semelhante a dos estrógenos, representando uma alternativa na prevenção e/ou tratamento de doenças hormônio-dependentes, como câncer, sintomas da menopausa, doenças cardiovasculares e osteoporose.A elaboração de queijos é uma das mais importantes atividades das indústrias de laticínio, sobretudo no Brasil. Sendo hoje o terceiro queijo mais consumido no País, o minas frescal atrai pelo seu alto rendimento tecnológico (L.kg -1 ) e giro rápido AbstractNine selected and trained panelists evaluated the appearance, odor, flavor and texture of three types of Minas frescal cheese (traditional, with fat free hydrosoluble soybean extract powder (PS-60) and bovine rennet and with PS-60 and microbiology coagulant). The traditional cheese were characterized by moisture appearance and junked flavor. The added PS-60 cheese made with bovine rennet showed cream color and bitter taste and the samples made with microbiology coagulant showed more soybean aroma. Instrumental characterization of the three types of cheese were developed by texture profile analysis (TPA), using a measuring tender TA-XT2i Stable Micro System and the color analysis, using a computer applicative and scanner. Considering texture, the traditional cheese and the cheeses added of PS-60 with bovine was more hardness; the traditional cheese was more fracturability, coesivity and mastigability and the traditional cheese and the cheese added of PS-60 and microbiology coagulant was more elastic. It was observed color difference among the cheeses, where the traditional cheese showed more intensity white yellow-greenish color. Considering the mean values obtained by acceptance test, it was observed that the added PS-60 cheese showed-up an acceptance of 88%.
