Concentrado protéico de resíduos da filetagem de tilápia-do-nilo (Oreochromis niloticus)Resumo -Este estudo objetivou o aproveitamento da carne mecanicamente separada (CMS) de resíduos da filetagem de tilápia-do-nilo (Oreochromis niloticus Linnaeus, 1757) na obtenção de um concentrado protéico de tilápia (CPT) para o consumo humano, caracterizando-o quanto aos parâmetros físico-químicos e sensoriais. O CPT foi caracterizado quanto aos seguintes aspectos: rendimento, umidade, proteína, gordura, cinzas, atividade de água (Aw) e aceitação sensorial. O CPT apresentou rendimento de 18,34%, baixos níveis de umidade e cinza e alto conteúdo protéico e lipídico, quando comparado à matéria-prima original (CMS) e baixa Aw. Na avaliação sensorial do CPT, a freqüência de aceitação dos provadores foi de 60,4% para a cor, 51,1% para o aspecto geral e 41,7% para o aroma. A descrição do aroma com termos como característico de pescado foi relatada por 44,2% dos provadores, sugerindo a necessidade de uma desodorização parcial do material, e indicando um equilíbrio em relação ao grupo dos provadores que não perceberam o odor característico. Esta pesquisa mostra agregação de valor a um material de descarte, gerando possibilidades de oferta de uma fonte proteica alternativa, de custo relativamente baixo.Palavras-chave -Tilápia-Concentrado protéico. Tilápia -Análise Sensorial.Abstract -This study aimed to use mechanically separated mince (MSM) from the residues left after filleting Nile tilapia (Oreochromis niloticus Linnaeus, 1757) to obtain a protein concentrate for human consumption and to assess its proximal composition and sensory characteristics. Yield, proximal composition, water activity and sensory evaluation were analyzed on the dry TPC. The TPC has a yield of 18.34%, and contained 1.38% moisture, 62.39% protein, 32.63% fat, 2.26% ash and had 0.16 Aw. Sensory evaluation of dry FPC powder expressed as frequency of acceptance by panelists was 60.4% for color, 51.1% for general appearance and 41.7% for aroma. Description of flavor using terms like "typical of fish" was reported by only 44.2% of the panelists, suggesting the need for a more efficient deodorizing process and showing a balance in relation to the group of panelists that did not notice the characteristic smell. The study shows the possibility of adding value to a residual food material offering an alternative source of protein at a relatively low cost.
-Bacillus spp. have been used against diseases caused by bacteria that affect cultured shrimp, providing beneficial effects on the host shrimps by altering their microbial community, and improving zootechnical indexes. The objective of this work was to evaluate the effects of a diet supplemented with Bacillus cereus-a bacterium with probiotic potential-on post-larvae Litopenaeus vannamei shrimps grown in laboratory. The experiment lasted for fifteen days and consisted of six treatments-control (T 1 ), probiotic (T 2 ), Vibrio parahaemolyticus (VP) (T 3 ), probiotic and VP (T 4 ), V. alginolyticus (VA) (T 5 ), and probiotic and VA (T 6 ). The survival rate, weight gain, colonization capacity of the probiotic bacteria, pathogen count, and histopathological lesions were evaluated. There was no significant difference (p≥0.05) in survival between treatments. The groups with pathogens and without probiotics presented lower weight gain. The result of the Bacillus cereus count in the treatments T 2 , T 4 and T 6 were significantly different (p<0.05), the probiotic bacteria were more aggressive in competing for space and nutrients when compared to V. parahaemolyticus than when compared to V. alginolyticus. Animals fed with the probiotic presented lower counts of these pathogens than those fed without the probiotic (p<0.05). No histopathological lesions were found in the organs and tissues of the shrimps. Bacillus cereus showed a high colonizing capacity in post-larvae shrimps, causing a significant reduction of pathogens, probably by secreting antimicrobial substances and the competitive exclusion, which justifies their use as probiotic bacteria.Keywords: Litopenaeus vannamei. AVALIAÇÃO DE POTENCIAL PROBIÓTICO FRENTE À INFECÇÃO EXPERIMENTAL POR VÍBRIOS EM PÓS-LARVAS DE CAMARÃO MARINHORESUMO -Bacillus spp. têm sido utilizados contra bacterioses que acometem camarão marinho cultivado, proporcionando efeito benéfico sobre o hospedeiro, alterando a comunidade microbiana intestinal e melhorando índices zootécnicos. O objetivo deste trabalho foi avaliar os efeitos de uma dieta suplementada com Bacillus cereus, bactéria com potencial probiótico em pós-larvas de Litopenaeus vannamei cultivados em laboratório. O experimento teve duração de quinze dias e consistiu de seis tratamentos: T 1 controle; T 2 somente com probiótico; T 3 com Vibrio parahaemolyticus (VP); T 4 com probiótico e com VP; T 5 com V. alginolyticus (VA); e T 6 com probiótico e com VA. Foram avaliados a sobrevivência, o ganho de peso, a capacidade de colonização das bactérias probióticas, contagem de patógenos e lesões histopatológicas. Não foi verificada diferença significativa (P≥0,05) entre os tratamentos na sobrevivência. Os grupos desafiados com patógenos e sem uso de probióticos foram os que apresentaram menor ganho de peso. -The cultivation of Litopenaeus vannamei has increased in inland areas by using low salinity waters. Cultivation techniques in coastal waters are well developed, however, studies for low salinity conditions are needed, especially regarding the ideal ionic composition of water and its effects on the zootechnical indices. Brazil has adopted this strategy and the semiarid region showed great potential due to its favorable climate and water conditions. Thus, experimental cultivations were conducted in Serra Talhada, State of Pernambuco, in order to evaluate the influence of two feeding strategies (with and without feeding) and three cultivation densities (5, 10 and 15 shrimps m , temperature ~28.09°C, pH ~8.48) and the shrimp growth were monitored with weekly biometry during the cultivation. A significant difference was found only in the treatment without feeding with 15 shrimps m -2 , the average final weight of all treatments ranged from 13.16±1.33 g to 15.50±1.66 g. The survival rates were high in the treatments with feeding and its variation between treatments was 60.56±6.76% and 83.00±4.00%.Key words: Litopenaeus vannamei. Low salinity. Semiarid. CULTIVO DO CAMARÃO MARINHO, SOB DIFERENTES DENSIDADES DE ESTOCAGEM E ALIMENTAÇÃO, EM ÁGUAS OLIGOHALINASRESUMO -O cultivo do Litopenaeus vannamei vem sendo ampliado nas áreas interioranas, fazendo uso de águas com baixa salinidade. As técnicas de cultivo em águas costeiras já estão bastante desenvolvidas, porém em condições de baixa salinidade são necessários vários estudos, como a composição iônica ideal da água e seus efeitos sobre os índices zootécnicos. O Brasil tem adotado essa estratégia e o semiárido surge como uma região de grande potencial, já que dispõe de clima e condições hídricas favoráveis. Desta forma, cultivos experimentais foram realizados no município de Serra Talhada -PE, com o objetivo de avaliar a influência de duas estratégias de alimentação (com e sem ração) e três densidades de cultivo (5, 10 e 15 camarões.m . A estocagem foi realizada com juvenis de 8,53 g, o cultivo teve duração de 50 dias e os animais foram alimentados duas vezes por dia com ração comercial, contendo 25% de proteína bruta, monitorada a qualidade da água (salinidade±1,0 g.L -1 ; temperatura ± 28,09 ºC; pH ± 8,48; entre outros) e crescimento dos camarões durante o cultivo, com biometrias semanais. Foi detectada diferença significativa apenas no tratamento sem ração com 15 camarões.m -2 , o peso médio final entre todos os tratamentos variou de 13,16±1,33 g a 15,50±1,66 g. As taxas de sobrevivências foram melhores nos tratamentos com ração, a variação entre os tratamentos foi de 60,56±6,76% e 83,00±4,00%.Palavras-chave: Litopenaeus vannamei. Baixa salinidade.
