The objective of this research was to evaluate the fatty acid profile and physicochemical properties of buriti oil under storage conditions. The oil was analyzed for 70 days by evaluating the physicochemical characteristics of acidity index, refractive index, bulk density, absolute viscosity, peroxide index, lipid oxidation by TBARS method, color parameters (L *, a *, b *, C * e h *) and carotenoid profile (α-carotene and β-carotene) for every 10 days of storage, in addition to the β-carotene/linoleic acid system and fatty acid profile. Variables remained stable over the analysis periods and the total carotenoids ranged from 836.91 to 1036.96 µg/g. Oleic acid accounted for the highest content among fatty acids, with a value of 78.06 g/100 g of fatty acids and a ω6/ω3 ratio of 1.95. Buriti oil has a nutritional quality and a fatty acid profile that justifies recommendations for its consumption, suggesting the need for regulatory bodies to draw up a standardized protocol for extracting oil from the fruit pulp.
Objetivou-se neste estudo avaliar a qualidade físico-química e o perfil de ácidos graxos de uma pré-mistura com substituição parcial da gordura animal por óleo de buriti (Mauritia flexuosa L.) para aplicação em produto cárneo. Quatro níveis de substituições de gordura animal por óleo de buriti foram formulados sendo 0% (P0%) 20% (P20%), 40% (P40%) e 60% (P60%) m/m. Avaliou-se o teor de dialdeído malônico (MDA) pelo método de TBARS, o teor de carotenoides totais (µg g-1) por extração cetônica a cada 30 dias, durante 90 dias de armazenamento e o perfil de ácidos graxos (g 100 g-1 de ácidos graxos identificados) no dia da formulação. Observou-se o aumento dos teores de dialdeído malônico (mg de MDA kg-1 de amostra) conforme os tempos de leitura variando entre 0,28 a 0,33 aos 30 dias, 0,37 a 0,41 aos 60 dias e 0,53 a 0,75 aos 90 dias de armazenamento para as formulações. Verificou-se alteração nas características físico-químicas da pré-mistura e melhoria para o perfil de ácidos graxos na proporção ω6 e ω3, diminuição do teor total de ácidos saturados (SFA), aumento nos teores de ácido oleico ω9 conforme as substituições de gordura animal pelo óleo de buriti. Conclui-se que durante o período de 90 dias de avaliação, a pré-mistura com substituição de gordura animal por óleo de buriti (P20%) se mostra como uma alternativa a ser aplicada na indústria alimentícia em produtos cárneos como hambúrgueres, linguiças, almôndegas entre outros pois diminui o teor de gordura saturada bem como melhora a relação ω6/ω3.
Filmes e revestimentos comestíveis são desenvolvidos para proteger os alimentos, aumentando sua vida de prateleira. Eles têm o potencial para reduzir o uso de polímeros sintéticos tradicionais e manter a qualidade dos alimentos, controlando a transferência de massa, melhorando a integridade mecânica, física e química. Além de limitar a respiração em vegetais, as embalagens podem atuar contra o escurecimento enzimático, reações de oxidação lipídicas e redução do crescimento de microrganismos patogênicos. Dessa forma, objetivou-se com o presente trabalho, elaborar uma revisão sistemática sobre filmes biodegradáveis comestíveis, considerando a estabilidade física das soluções filmogênicas para produção de filmes comestíveis com atividade antioxidante e a caracterização dos mesmos quanto às suas propriedades físico-químicas e tecnológicas. A pesquisa focou em artigos publicados nos últimos 10 anos, a partir de 2012. A partir dos artigos selecionados, foram avaliados os insumos utilizados nas formulações dos filmes e revestimentos, as modificações físicas promovidas por cada biopolímero e quais foram os resultados obtidos. Os biomateriais se apresentam como alternativa para a redução do impacto ambiental, substituindo embalagens plásticas convencionais por filmes e revestimentos comestíveis aplicados nos alimentos, ou até mesmo como embalagem primária. Há diversas opções de filmes e revestimentos biodegradáveis no mercado, sendo que a barreira inicial à adoção comercial já foi superada. Dessa forma, sugere-se políticas públicas e incentivos fiscais para o aumento da utilização de embalagens biodegradáveis e comestíveis, além de intensificar a educação do consumidor, incentivando a adoção de embalagens eco friendly.
A castanha-do-Brasil (Bertholletia Excelsa) é rica em ácidos graxos monoinsaturado (MUFA) e poli-insaturado (PUFA) como o ácido oleico, ácido linoleico e ácido linolênico. Por apresentar alto conteúdo desses ácidos torna-o um alimento perecível, e assim susceptível a sofrer reações de oxidações lipídicas que modificam as propriedades físicas, químicas e sensoriais do produto, portanto, diminui o seu tempo de vida de prateleira e o valor agregado. Uma das soluções encontradas na literatura é a aplicação de embalagens ativas, como filmes e revestimentos que são elaborados à base de biopolímeros como proteínas, polissacarídeos ou lipídeos, que possuem uma matriz de fácil interação com aditivos que podem agregar novas funções na produção de embalagens antioxidantes, antimicrobiana, com baixa permeabilidade ao vapor d’água, e entre outras atividades. A presente revisão literária tem como objetivo buscar artigos e apresentar os resultados da aplicação de filmes e revestimento em oleaginosas, além de dissertar um pouco sobre o que seria oxidação lipídica, o que favorece a reação e como minimizá-las. Com o resultado da pesquisa, pode-se concluir que a aplicação de filmes e revestimentos com compostos antioxidantes auxilia na proteção da oxidação dos lipídeos em oleaginosas, contribuindo no shelf life do produto, mantendo as características sensoriais que os caracterizam como alimentos de alto valor nutritivo.
