El presente trabajo de investigación estudió la variabilidad de la fase de latencia en células individualizadas de Salmonella enterica serovar Enteritidis y Listeria innocua después de recibir tratamientos inactivantes de acidificación, irradiación y calor. Una vez establecido el protocolo de los ensayos experimentales; el Bioscreen determinó previamente: la cantidad de bacterias que generan una turbidez de 0,20 de densidad óptica, el tiempo de detección y la tasa específica de máximo crecimiento; datos que indican las fases de latencia en condiciones experimentales. Sin embargo, para afinar aún más la estimación del número de células por pocillo y así calcular la fase de latencia de células individuales, se planteó dos estrategias: 1) que todas las muestras con crecimiento contenían una célula; 2) que un cierto número de muestras contendrán uno, dos o más células. Así, si hay dos o n células viables, la fase de latencia de la población será paulatinamente más corta y, es de esperar, menos variable. Los datos analizados concluyeron que la variabilidad de los microorganismos en estudio, aumentan cuando el substrato de crecimiento del microorganismo es más complejo y cuando la temperatura de crecimiento se aleja de la óptima. Desde el punto de vista de la variabilidad de la fase de latencia, la acidificación es la más variable, en cambio la irradiación es una excelente alternativa a los tratamientos térmicos porque, tanto para la inactivación como para la fase de latencia de los microorganismos supervivientes irradiados los resultados son más homogéneos y menos variables.
