Factors affecting Lactobacillus fermentation of shrimp waste for chitin and protein liquor production were determined. The objective of the fermentation is medium conditioning by Lactobacillus through production of proteases and lowering of the pH. The efficiency was tested by conducting fermentation of biowaste in 1-1 beakers with or without pH adjustment using different acids. Addition of 5% glucose to the biowaste supported the growth of lactic acid bacteria and led to better fermentation. Among four acids tested to control pH at the start and during fermentation, acetic acid and citric acid proved to be the most effective. In biowaste fermented with 6.7% L. plantarum inoculum, 5% glucose, and pH 6.0 adjusted with acetic acid, 75% deproteination and 86% demineralization was achieved. Replacement of acetic acid by citric acid gave 88% deproteination and 90% demineralization. The fermentation carried out in the presence of acetic acid resulted in a protein fraction that smelled good and a clean chitin fraction.
Las variantes alélicas de gluteninas de alto (GAPM), bajo peso molecular (GBPM) y las gliadinas influencian fuerza y extensibilidad en las masas y determinan el uso industrial del trigo (Triticum aestivum L.). El objetivo del estudio fue identificar los alelos de gluteninas y gliadinas y determinar su relación con la calidad panadera en las variedades Cal Blanco F2011, Matchett F2011 y RSM-Norman F2008 cosechadas en otoño-inverno 2014-2016. Cada muestra (3 kg) se procesó por triplicado. El fraccionamiento de proteínas fue en geles verticales (20 x 23 cm) mediante SDS-PAGE. Según Payne y Lawrence (1983) se identificaron GAPM. GBPM según Jackson et al. (1996) y Branlard et al. (2003). El probable uso final se definió basándose en combinaciones similares reportadas por diversos autores. Para Glu-1; 1; 17+18; 5+10 en Cal Blanco F2011 y Matchett F2011 y 2*; 7+9; 5+10 en RSM-Norman F2008 todas relacionadas con calidad de panificación (fuerza y extensibilidad). Para Glu-3; b, g y c en Cal Blanco; d, h y b en Matchett F2011 y c, g y b en RSM-Norman F2008. Los alelos f, d y f (locus Gli-B1) de ω-gliadinas para Cal Blanco, Matchett F2011 y RSM-Norman F2008 respectivamente. La identificación de los alelos, el análisis de distribución y la comparación en la literatura nos permitió clasificar a las variedades: RSM-Norman F2008 calidad moderada-alta; Matchett F2011 calidad alta y Cal Blanco F2011 calidad alta. Por lo tanto se presumen variedades con gluten fuerte. La variedad Cal Blanco F2011 podría emplearse para mejorar masas.
Las harinas de grano entero de trigo (HGET) son fuente de fibra, antioxidantes, vitaminas, fitoquímicos y nutrientes y podrían suplir la creciente demanda de la industria panadera de trigos con alta calidad. El objetivo del estudio fue evaluar la calidad panadera de HGET de las variedades Cal Blanco F2011 (HCB); Mattchet F2011 (HM) y RSM-Norman F2008 (HN) cultivadas en México en otoño-inverno 2014 a 2016, mediante pruebas convencionales y una no convencional (consiste en la medición del volumen de fermentación de cada muestra de harina). Se realizaron determinaciones bromatológicas, reológicas, de calidad panadera por triplicado. Se realizó un ANDEVA, prueba por DMS (p<0,05) y un análisis de correlación. La HCB tiene mayor proteína (14,33%) que las testigos. Todas las harinas tienen tiempos de amasado favorables para buen volumen de pan, con buena fermentación y extensibilidad. Por lo anterior, las tres HGET experimentales resultaron ser competitivas a las harinas comerciales, pero HCB fue superior en casi todas las pruebas. La HM y HN, son similares a la HI en VOP, VOE y HAL volviéndolas comparables en calidad panadera. El pHf de HM y HCB es igual, pero en panificación la última es de mejor calidad haciéndola superior a las harinas integrales evaluadas. Se recomienda estudiar más la prueba de fermentación por la correlación con factores importantes en la diversas pruebas de calidad, esto con el fin de identificar si es factible o no su uso al evaluar la calidad de las harinas.
