Actualmente vivimos las consecuencias de la revolución verde en todo el mundo. Podemos observar la intensificación de la producción agrícola con el aumento del uso de diversas tecnologías, como los plaguicidas, herbicidas y fertilizantes, así mismo, nuevas variedades de cultivos de alto rendimiento, con la intención de aumentar la producción alimentaria y resolver el problema de hambre del mundo después de la segunda guerra mundial (Borlaug, 2003; Suárez & Serrano, 2011). El uso intensivo de agroquímicos sintéticos en la agricultura, ha causado diversos problemas en el medio ambiente, como la contaminación del agua, del suelo y de los alimentos, causando posiblemente problemas en la salud de los agricultores y consumidores. También la resistencia de plagas y enfermedades a variados principios activos utilizados indiscriminadamente, y desequilibrio biológico con la reducción o eliminación de organismos benéficos que consecuentemente disminuyen la biodiversidad (García, 1997a). Diversos segmentos de la sociedad han considerado y propuesto una demanda creciente de alternativas de producción que permitan la disminución del impacto ambiental que se ha ocasionado y a su vez atiendan las restricciones ambientales, las necesidades y exigencias de los consumidores.
