Nowadays, consumers are paying more and more attention to healthy eating, and unfortunately, insulin resistance and type 2 diabetes are affecting many people. In general, people are paying more attention to the consumption of fibre-rich foods. In our study, we developed high-fibre ready-to-bake flour mixture blends using purple wheat flour (white and wholemeal). For fibre fortification, inulin, chia seed flour and psyllium husk flour were used. After determining the basic nutritional parameters of the raw materials, four series of experiments were carried out to prepare bread rolls and to test the finished products. The correct mixing ratio of the enriching agents were tested, and the final flour mixtures were tested. At the end of our research, three blends (white purple wheat flour + 4% inulin + 2% psyllium husk flour; wholemeal purple wheat flour + white purple wheat flour + 4% inulin + 4% chia seed flour; wholemeal purple wheat flour + 4% inulin + 4% chia seed flour) were developed.
Nowadays, the consumption of bison meat is becoming more widespread worldwide, while it’s experiencing a renaissance in the United States. For the industry, this could lead to the emergence of a new market sector in the future. It is important to examine the extent to which the quality of its meat differs from that of the usual cattle or buffalo returning to the public consciousness. Our measurements were performed on the loin of bison, buffalo and cattle, including Angus cattle based on the consumer price per 100 grams of product, instrumental colour measurement, instrumental stock measurement, cooking, roasting and pressing loss, instrumental analytical examination and sensory evaluation. During our research, we concluded that bison meat may become a very popular product in Hungary in the future. There is a clear place for the consumption of both buffalo meat and bison meat in a health-conscious diet based on the measured results.
A húsipar egyik legjellegzetesebb terméke a párizsi vagy parizer, amely nagyon megosztja a fogyasztókat, a gyerekek többnyire szeretik, azonban leginkább a felnőtt emberek igyekeznek elkerülni ezt a húskészítményt az összetétel, valamint a gyártástechnológia mivolta miatt. Kíváncsi voltam arra, hogy napjainkban hogyan alakul ezen termék fogyasztási és vásárlási szokásai. Az eredmények azt sugallják, hogy a kitöltők kb. 58%-a fogyaszt párizsit. Többen azért nem fogyasztanak párizsit, mert rossz minőségű, alacsony hústartalmú, egészségtelen terméknek tartják. A válaszadók a párizsi belső tulajdonságait (íz, első benyomás, típus) tartják a legfontosabb szempontnak. Azonban a kérdőív eredményeinek kiértékelése során érzékelhető volt, hogy a fogyasztók zöme nem ismerik a párizsihoz kapcsolódó jogszabályokat, valamint a párizsi gyártástechnológiáját. Példaként említhető az, hogy a párizsi-fogyasztók nagyjából 80%-a nincs tisztában azzal, hogy a parizernek min. 51% hústartalommal kell bírnia, sokan ennél magasabb hústartalmat várnának el. Emellett bizonyos esetekben érezhető a sok negatív vélemény és a média negatív hatása a termékre nézve („mert rajta van a WHO rákkeltő listáján”).
Munkánk első fázisában a többváltozós statisztikai folyamatszabályozás (MSPC) használatához szükséges elméleti ismereteket néztük át. Előző évben az alkalmazható összefüggések alakjait és szerepüket tisztáztuk (Mihalkó-Rajkó, 2016). A második fázisban R project-ben megvalósított szimulációs vizsgálatokkal és különböző gyakorlati alkalmazási illusztrációkkal igazoljuk az MSPC előnyeit az egyváltozós statisztikai folyamatszabályozással (USPC-vel) szemben. Emellett főkomponéns-elemzéssel kielemezzük azt, hogy mi okozhatja a jel tartományon kívülre kerülését, illetve bemutatjuk az MYT-felbontás alkalmazását.
Animal food, especially meat, has played an important role in the history of mankind. Different meats can be used in the production of meat products. In addition to lean meats, mechanically deboned meat (MDM) and mechanically separated meat (MSM) can also be used in meat products. However, the latter does not qualify as meat due to damage to the muscular structure due to the high pressure applied during the separation, therefore cannot be included in the meat content of products. The aim of our experiment was to compare whole, minced meat, MDM and MSM from turkey (raw and in the form of meat paste). Technofunctional tests (water-holding and -binding capacity), color measurement, chemical composition (moisture, protein and fat content), electron microscopic recording, rheological properties show that the quality of MSM is inferior to other meat raw materials. These properties can also result in the production of lower quality products.
