Brazil represents approximately 29% of the world’s coffee exports, with 15% of that being "specialty coffee." Most Brazilian coffee exports are composed of commoditized green beans, influencing the value chain to be grounded on an exchange paradigm. This scenario started to change with the introduction of specialized coffee shops, coffee capsules for home consumption, and demand for a more artisanal product. A paradigm of value creation along the chain drives production processes that aim to differentiate products through superior coffee beans and unique experiences. This study was developed through content analysis of 15 years of news collected from two Brazilian newspapers. Additionally, we interviewed owners of coffee shops, coffee producers, cooperatives, intermediaries, and regulators. We concluded that the value chain faces challenges in reaching higher value-in-use creation for all involved actors.

This research aims to examine the institutional changes triggered by the interplay between global and local brands to advance the understanding of the legitimation process in established marketplaces. Method: Data was collected from blogs and sites of football specialists and in-depth interviews with professionals in the football business in Brazil. The analyses process was inductive inspired by Grounded Theory. Main Results: The analysis provides evidence of the legitimation of global brands in the Brazilian market, and, in contrast to expectations based on previous studies, the legitimation of local brands was maintained. Relevance/originality: Local brands maintain the legitimation and have high levels of acceptance in this social context because they are an expression of the local culture, iconic brands, and identity symbols. Theoretical/Methodological Contributions: Understanding the dynamics of a market requires the comprehension of the legitimacy process of its institutions. The contribution of this study is to discuss the effects of the destabilization provoked by the global brands' legitimacy in local markets.

A crise econômica afeta o comportamento de compra de alimentos. Estudos empíricos avaliaram a mudança dos consumidores na forma de acessar segmentos específicos e alterações na cesta de consumo, no entanto, pouco tem sido pesquisado sobre a modificação do perfil de consumo de alimentos em cenários de crise. Essa pesquisa investigou mudanças ocorridas nos hábitos de compra de alimentos no contexto da crise econômica brasileira. Foram realizadas 11 entrevistas em profundidade, empregando análise de conteúdo de acordo com estrutura de Strauss e Corbin (2008). Conceitos importantes emergiram - reflexos da crise econômica - como preocupação, pressão social e, por outro lado, oportunidades. Ao compreender melhor esse novo cenário, o conhecimento adquirido auxilia gestores varejistas na adequação do seu posicionamento, assim como a identificação de eventuais lacunas de estudo na proposição de uma agenda para avançar no conhecimento. Espera-se que essa pesquisa permita não só ampliar o conhecimento acerca dos impactos da crise econômica no mercado de alimentos, mas também proporcionar reflexões acerca das mudanças no comportamento de consumo a fim de investigar como o consumidor - diante de cenário adverso - altera a sua forma de se relacionar com o varejo de alimentos e suas experiências de consumo.
