The effects of processing and cooking practices on the chemical composition and antioxidant activity of Portuguese wild edible mushroom species (Lactarius deliciosus, Macrolepiota mastoidea, Macrolepiota procera, and Sarcodon imbricatus) were investigated. Dried, frozen, and cooked samples were analyzed for proximate constituents (moisture, fat, crude protein, ash, and carbohydrates) and nutritional value. Fatty acid and sugar profiles were also obtained by gas-liquid chromatography/flame ionization detection and high-performance liquid chromatography/refraction index, respectively. The antioxidant properties were evaluated by several biochemical assays: 2,2-diphenyl-1-picrylhydrazyl radical scavenging capacity, reducing power, inhibition of beta-carotene bleaching, and inhibition of lipid peroxidation in brain tissue using thiobarbituric acid reactive substances. Results of this study show that mushroom species and processing and cooking practices are all effective determinants for either chemical composition or antioxidant properties. Cooked samples proved to have lower nutrient concentrations and lower antioxidant activities than either dried or frozen samples. In what concerns fatty acids and sugar individual profiles, only cooking proved to be relevant: The cooked samples presented higher monounsaturated fatty acid and lower polyunsaturated fatty acid and sugars contents.
The aim of this study was to examine the performance characteristics of male and female finalists in the 100-m distance at the 2016 European Championships in swimming (long-course-metre). The performances of all 64 (32-males and 32-females) were analysed (8 swimmers per event; Freestyle, Backstroke, Breaststroke and Butterfly). A set of start and turn parameters were analysed. In the start main outcome, male swimmers were faster in Butterfly (5.71 ± 0.14s) and females in Freestyle (6.68 ± 0.28s). In the turn main outcome, male and female swimmers were faster in Freestyle (males: 9.55 ± 0.13s; females: 10.78 ± 0.28s). A significant and strong stroke effect was noted in the start and turn main outcome, in both sexes. In the start plus the turn combined, males and females were faster in Freestyle (males: 15.40 ± 0.20s; females: 17.45 ± 0.54s). The start and the turn combined accounted almost one-third of the total race time in all events, and non-significant differences (p > 0.05) were noted across the four swim strokes. Once this research made evident the high relevance of start and turns, it is suggested that coaches and swimmers should dedicate an expressive portion of the training perfecting these actions.
Hazelnut (Corylus avellana L.) is a very popular dry fruit in the world being consumed in different form and presentations. In the present work, three hazelnut cultivars (cv. Daviana, Fertille de Coutard and M. Bollwiller) produced in Portugal, were characterized in respect to their chemical composition, antioxidant potential and antimicrobial activity. The samples were analysed for proximate constituents (moisture, fat, crude protein, ash), nutritional value and fatty acids profile by GC/FID. Antioxidant potential was accessed by the reducing power assay, the scavenging effect on DPPH (2,2-diphenyl-1-picrylhydrazyl) radicals and b-carotene linoleate model system. Their antimicrobial capacity was also checked against Gram positive (Bacillus cereus, B. subtilis, Staphylococcus aureus) and Gram negative bacteria (Pseudomonas aeruginosa, Escherichia coli, Klebsiella pneumoniae) and fungi (Candida albicans, Cryptococcus neoformans). Results showed that the main constituent of fruits was fat ranging from 56% to 61%, being the nutritional value around 650 kcal per 100 g of fruits. Oleic was the major fatty acid varying between 80.67% in cv. F. Coutard and 82.63% in cv. Daviana, followed by linoleic, palmitic, and stearic acids. Aqueous hazelnut extract presented antioxidant activity in a concentration-dependent way, in general with similar behaviour for all cultivars. Hazelnut extracts revealed a high antimicrobial activity against Gram positive bacteria (MIC 0.1 mg/ mL) showing a good bioactivity of these fruits.
The aim of this study was to develop a structural equation model (i.e., a confirmatory technique that analyzes relationships among observed variables) for young swimmer performance based on selected kinematic, anthropometric and hydrodynamic variables. A total of 114 subjects (73 boys and 41 girls of mean age of 12.31 ± 1.09 years; 47.91 ± 10.81 kg body mass; 156.57 ± 10.90 cm height and Tanner stages 1-2) were evaluated. The variables assessed were the: (i) 100 [m] freestyle performance; (ii) stroke index; (iii) speed fluctuation; (iv) stroke distance; (v) active drag; (vi) arm span and; (vii) hand surface area. All paths were significant (p < .05). However, in deleting the path between the hand surface area and the stroke index, the model goodness-of-fit significantly improved. Swimming performance in young swimmers appeared to be dependent on swimming efficiency (i.e., stroke index), which is determined by the remaining variables assessed, except for the hand surface area. Therefore, young swimmer coaches and practitioners should design training programs with a focus on technical training enhancement (i.e., improving swimming efficiency).
New theories about dynamical systems highlight the multi-factorial interplay between determinant factors to achieve higher sports performances, including in swimming. Longitudinal research does provide useful information on the sportsmen's changes and how training help him to excel. These questions may be addressed in one single procedure such as latent growth modeling. The aim of the study was to model a latent growth curve of young swimmers' performance and biomechanics over a season. Fourteen boys (12.33 ± 0.65 years-old) and 16 girls (11.15 ± 0.55 years-old) were evaluated. Performance, stroke frequency, speed fluctuation, arm's propelling efficiency, active drag, active drag coefficient and power to overcome drag were collected in four different moments of the season. Latent growth curve modeling was computed to understand the longitudinal variation of performance (endogenous variables) over the season according to the biomechanics (exogenous variables). Latent growth curve modeling showed a high inter- and intra-subject variability in the performance growth. Gender had a significant effect at the baseline and during the performance growth. In each evaluation moment, different variables had a meaningful effect on performance (M1: Da, β = -0.62; M2: Da, β = -0.53; M3: η(p), β = 0.59; M4: SF, β = -0.57; all P < .001). The models' goodness-of-fit was 1.40 ⩽ χ(2)/df ⩽ 3.74 (good-reasonable). Latent modeling is a comprehensive way to gather insight about young swimmers' performance over time. Different variables were the main responsible for the performance improvement. A gender gap, intra- and inter-subject variability was verified.
The aim of this study was to analyze the changes in the hydrodynamic profile of young swimmers over a competitive season and to compare the variations according to a well-designed training periodization. Twenty-five swimmers (13 boys and 12 girls) were evaluated in (a) October (M1); (b) March (M2); and (c) June (M3). Inertial and anthropometrical measures included body mass, swimmer's added water mass, height, and trunk transverse surface area. Swimming efficiency was estimated by the speed fluctuation, stroke index, and approximate entropy. Active drag was estimated with the velocity perturbation method and the passive drag with the gliding decay method. Hydrodynamic dimensionless numbers (Froude and Reynolds numbers) and hull velocity (i.e., speed at Froude number = 0.42) were also calculated. No variable presented a significant gender effect. Anthropometrics and inertial parameters plus dimensionless numbers increased over time. Swimming efficiency improved between M1 and M3. There was a trend for both passive and active drag increase from M1 to M2, but being lower at M3 than at M1. Intra-individual changes between evaluation moments suggest high between- and within-subject variations. Therefore, hydrodynamic changes over a season occur in a non-linear fashion way, where the interplay between growth and training periodization explain the unique path flow selected by each young swimmer.
