Milk components have the ability to interact with functional compounds, such as polyphenols. This may result in altered biological activity of the compounds, and changes in the technological properties of dairy products. The objective of this study was to examine the effect of the addition of yerba mate (YM) on the physico-chemical and sensory properties of fresh cheese (FC) during storage (21 days). Different concentrations of YM were used for FC production: 0.0% (control), 0.5% (FC5), 1.0% (FC10) and 2.0% (FC20); and the bioactive compound concentration, antioxidant activity, color, texture, structure and sensory acceptance were evaluated. YM conferred antioxidant activity to FC; and affected the color, texture and structure. Storage time influenced all evaluated parameters except for color. FCs with 0.5 and 1.0% YM were scored as having higher sensory acceptability than FC with 2.0% YM. However, all supplemented FCs were well accepted by consumers (scores above 6). The YM could represent a source of bioactive compounds to improve the biological activity of dairy products.
This study aimed to evaluate the effects of the supplementation of flaxseed oil and/or vitamin E on dry matter (DM) and nutrient digestibility, milk composition, fatty acid composition, and antioxidant capacity in buffalo milk. Four crossbred female dairy water buffaloes (97 ± 22 days in milk; 6.57 ± 2.2 kg of milk/day, mean ± SD) were distributed in a 4 × 4 Latin square design, with a 2 × 2 factorial arrangement (with or without flaxseed oil at 25 g/kg dry matter; with or without vitamin E at 375 IU/kg dry matter). The experimental period was divided into four periods of 21 days each (16 days for adaptation; five days for data collection). There were four treatments: control diet (no flaxseed oil and no added vitamin E); flaxseed oil diet (flaxseed oil at 25 g/kg DM); vitamin E diet (vitamin E at 375 IU/kg DM), and a combination of both flaxseed oil and vitamin E. The animals were fed total mixed ratios. For all response variables, there was no interaction between flaxseed oil and vitamin E. Flaxseed oil supplementation reduced neutral detergent fiber (NDF) and acid detergent fiber (ADF) apparent total tract digestibility, increased the n-3 fatty acid concentration in milk approximately three-fold while reducing the n-6/n-3 ratio from 9.3:1 to 2.4:1. Vitamin E supplementation increased NDF apparent total tract digestibility and milk total antioxidant capacity. Although there was no interaction between the treatments; flaxseed oil supplementation in lactating buffaloes increased polyunsaturated fatty acid, while vitamin E supplementation increased antioxidant capacity and decreased oxidation products.
The objective of this work was to evaluate the bromatological composition, bioactive compounds, antioxidant activities, and color of the leaves of olive cultivars Arbosana, Arbequina, Frantoio, Manzanilla, and Koroneiki in northwestern Paraná, Brazil. Leaves of each cultivar were collected for the experiment, which was carried out in a completely randomized design. The dry matter (DM) of olive leaves contains mostly carbohydrates (56.15 to 59.42 g 100 g-1 DM) and fibers (17.37 to 19.73 g 100 g-1 DM) in its bromatological composition. The total polyphenol content ranges from 13.27 to 22.81 mg GAE g-1, with cultivar Manzanilla standing out, and the flavonoid content from 6.50 to 7.65 mg QE g-1. Manzanilla shows the highest antioxidant activity of 93.56 and 78.15% in the DPPH and ABTS assays, respectively. When compared with the other cultivars, Manzanilla and Koroneiki have leaves with a higher green intensity and total chlorophyll content of 0.958 and 0.833 mg 100 mL 1, respectively. In the ABTS assay, there is a correlation both between total polyphenol content and antioxidant activity and between chlorophyll content and antioxidant activity. Olive leaves have characteristics that allow their application as an additive or ingredient for the development of food products with satisfactory antioxidant activity.
Biologicamente, os antioxidantes possuem a função de inibirem ou ainda frearem processos de oxidação gerados naturalmente pelo sistema fisiológico das células. Tecnologicamente, são amplamente adicionados aos alimentos, cosméticos e fármacos, não somente com o intuito de retardar reações de oxidação e aumentar a vida útil, como também, para combater os radicais livres e proteger o sistema fisiológico do corpo humano. O presente trabalho teve como objetivo investigar, através de revisão de literatura, o uso de antioxidantes naturais que podem ser adicionados tecnologicamente a produtos lácteos, como fontes de auxílio, não somente ao sistema fisiológico do corpo, como também, às propriedades físico-químicas, reológicas e sensoriais dos produtos. A adição de antioxidantes em qualquer tipo de produto alimentício, cosmético ou fármaco, deve ser minuciosamente avaliada e testada, de acordo com as características desejáveis do produto final, respeitando sempre a lesgislação vigente. Vários alimentos de origem vegetal são utilizados como fontes de antioxidantes para o enriquecimento nutricional e tecnológico de produtos. Estes ingredientes funcionais podem ser obtidos e aplicados por diversas técnicas, dependendo do objetivo da aplicação. Contudo, ainda pouco se sabe sobre o efeito in vivo desdes alimentos quando consumidos, necessitando mais pesquisas que abordem a real absorção destes compostos pelo organismo.

O relacionamento entre seres humanos e cães estreitaram-se principalmente nos últimos anos em consequência houve um aumento no setor pet food, disponibilizando uma grande variedade de produtos. Com a alta variedade de alimentos disponíveis no mercado, a escolha do tipo de dieta torna-se um processo complexo e confuso. O objetivo da presente revisão bibliográfica é expor as características das principais formas de alimentação para cães bem como suas vantagens e desvantagens. A maioria dos tutores alimentam seus cães com rações comerciais, pela facilidade de compra e armazenamento. Porém, no processo de fabricação destes alimentos, nem sempre as informações contidas no rótulo condizem com os valores nutricionais do produto e existe inclusão de diversos aditivos químicos. Com a crescente popularidade da alimentação não convencional, as dietas naturais e caseiras oferecem outras possibilidades de escolha dos ingredientes, maior palatabilidade e digestibilidade da dieta, porém, devem ser formuladas adequadamente por profissionais evitando assim carências ou excessos de nutrientes.
