A Recopilação de notícias soteropolitanas e brasílicas, popularmente conhecida como as Cartas de Vilhena, são uma referência constante dos pesquisadores sobre a Bahia nos finais do século XVIII. Neste artigo, elas são utilizadas como uma forma de compreensão da alimentação dos baianos em uma abordagem introdutória, na medida em que suas informações são concentradas na produção e distribuição de alimentos. Porém, muitos desses alimentos já estão preparados, como a célebre relação de "especialidades baianas", o que termina por nos fazer pensar sobre a mesa dos baianos nos últimos momentos do século XVIII.
