(Reçu le 23 août 1993; accepté le 24 décembre 1993) Résumé -Le polymorphisme de la caséine as' caprine est associé à différents niveaux de synthèse protéique: les allèles A, 8 et C sont associés à un taux de caséine Us, "fort .. (3,6 gll), l'allèle E à un taux "moyen .. (1,6 gll) et les allèles D et F à un taux "faible » (0,6 gll). Ce travail avait pour but de déterminer l'influence de ce polymorphisme sur le rendement fromager potentiel du lait et sur les caractères des fromages. Quatre-vingt dix-neuf lots de fromage ont été fabriqués en comparant le lait de 3 lots de chèvres homozygotes as,-CnAA (lait A), Us,-CnEE (lait E) et Us,-CnFF (lait F) du même troupeau. Le lait A était plus riche en protéines, en caséine et en graisse que le lait E, lui-même plus riche que le lait F. Le rapport caséine/protéines du lait A était plus élevé que celui du lait F, celui du lait E étant intermédiaire. Le taux butyreux du lait A était également plus élevé que celui des 2 autres, mais cette augmentation était proportionnellement moins forte que celle du taux protéique. La différence moyenne entre les rendements en fromages A et E atteignait +8,2% et la différence entre A et F +17,7%. Les fromages faits avec le lait A étaient un peu moins gras, plus fermes et avaient, en milieu et fin de lactation, une flaveur caractéristique de fromage de chèvre un peu moins intense que les 2 autres.
national de Recherches zootechniques, 78-Jouy-est-Josas Institut national de la Recherche agronomique SOMMAIRE Cette étude a été entreprise dans 2 laiteries (en 19 6 5 dans la laiterie A, de 19 6 2 à 6 5 dans la laiterie B) traitant uniquement du lait de chèvre. Elle a permis d'analyser les variations saisonnières de la teneur du lait en matière grasse, matières azotées (totales et coagulables), calcium et de déterminer (par la méthode des régressions multiples) l'influence respective de ces constituants sur le rendement en fromage. Le lait de chèvre est aussi riche en calcium (1 , 17 g/kg de lait) que le lait de vache. Par contre, il est relativement pauvre en matières azotées totales et coagulables (29 , 3 8 g de MAT par kg de lait, dont 6 9 , 1 p. 100 seulement sont coagulables). Dans les 2 laiteries, le taux de matières azotées totales constitue la meilleure base d'estimation du rendement en fromage puisqu'il explique seul 75 p. 100 environ des variations de ce rendement ; l'influence du taux butyreux est peu ou pas significative. Il existe entre les 2 laiteries, des différences dues à la méthode de fabrication. Ainsi, l'égouttage préalable en sac, pratiqué dans la laiterie A, réduit la variation du poids moyen des fromages et permet d'obtenir une meilleure estimation des rendements. Pour améliorer génétiquement la valeur fromagère des laits de chèvre, il apparaît nécessaire de remplacer le « contrôle beurrier », pratiqué actuellement, par un contrôle de la richesse en protéines.
Cette étude a été effectuée sur l 152 chevrettes de race Saanen, issues de 71 boucs, pesées régulièrement jusqu'à mois et issues des 6 types d'accouplements possibles d'après le type de cornage des parents. Après élimination des effets année-mois de naissance et mode de naissance, il n'apparaît pas de différences significatives entre les poids des produits cornus et sans cornes issus des accouplements 2 , 3 et 5. En revanche, les produits nés de mères sans cornes Pp ont un poids supérieur de 5 , 5 p. 100 à i mois aux produits nés de mères cornues pp. Cet effet qui diminue relativement avec l'âge traduit vraisemblablement un effet maternel du gène P.
