Educated and skilled women are active change agents. This paper focuses on informal hospitality education as a tool for social change and empowerment for severely marginalized Nepalese women. Studied over 18 months, a small group of women cooking for a boutique local and international tourist market in Kathmandu participated in cookery skills training. The Australian educator/researchers focused on the educational experience to uptake and retention of cookery skills and technical language. As a result of the educational intervention, changes in personal attributes and perceptions of inherent sociocultural gender roles/caste emerged. Participation in the cookery skills training program contributed partially as a catalyst that improved confidence, communication skills and exposed to the women pathways toward self-sustainability, emancipation and empowerment within an often-hostile working environment for women from severely disadvantaged backgrounds in Nepal.
Explicit instruction is a teaching model that demonstrates to students what to do and how to do it. One purpose of ideology is to focus the who, what, when, where, and why of a disciplinary field. Trained home economists make a sustained commitment to the core ideology of home economics. Mechanisms for identifying locally relevant challenges faced by individuals, families, and communities are embedded in the home economics knowledge base. To identify challenges and locate solutions (who, what, when, where, and how), home economics education programmes must actively teach or provide explicit instruction about the ideology that underpins the home economics disciplinary field. Neglecting ideology results in teaching unrelated subjects or compartmentalised content that may dilute connection to the core aims of the home economics’ ‘big picture’. This paper outlines how explicit instruction and embedded home economics ideology have positively impacted perceptions of the discipline amongst professionals who are new to the field. In teaching and learning environments, making home economics ideology visible and reinforced continuously across all content specialisation areas, the author observed that students acquired the words and concepts to explain the importance of home economics to others. Professionals who are new to the field became more confident and passionate advocates for home economics, because they had learnt and appreciated, through explicit instruction techniques, the what, the how to, and the why of home economics. Equipped with the discipline’s core ideology, professionals who make visible the home economics ‘big picture’ (i.e., the why) to others are better equipped to enact real-world applications of home economics that can adapt continuously to meet ever-changing and complex societal needs.
Background. Time insufficiency is frequently cited as a reason for poor dietary habits. This does not adequately explain the variations in how time is perceived as a factor in healthy eating. Aims. This study placed the eating behaviors of rural Australian women within the contexts of their stories to understand the factors that influenced healthy eating and how rural communities could enhance their health and well-being. Method. A three-phase sequential multimode narrative inquiry was used within four communities in rural Queensland, Australia. Each phase used a different mode of data collection: photo elicitation focus groups, narrative interviews, participatory workshops. Data were thematically analyzed iteratively to inform subsequent phases. Results. Nine final themes were identified. This article explored the theme of time and two contrasting perceptions of time sufficiency regarding healthy eating within a rural context during a drought. Discussion. Exploration of “time as a commodity” and “time as a duty” allowed a deeper understanding of time as a social and environmental determinant of health. Conclusion. Time’s influence on healthy eating is much more than the minutes it takes to prepare a meal. To fully appreciate its impact, time should be considered as a social and environmental determinant of health.
