The present work aims to apply the slow pasteurization process to the pulp and skin of the mandacaru fruit and to evaluate its influence on total phenolic compounds and antioxidant activity. Manual pulping was performed to obtain the fractions of the mandacaru fruit, where the pulp and skin were separated. Then, the fractions obtained were processed in a domestic blender and packed separately in glass containers where they were pasteurized by immersion in water at 65 °C for 30 minutes. Therefore, the parameters of total phenolic compounds and antioxidant activity were analyzed by the ability to capture the ABTS+ (2.29-azinobis-(3-etilbenzotiazolina-6-sulfônico) radical and the ability to capture the DPPH (2.2-difenil-1- picril-hidrazil) radical. The highest values of bioactive compounds were found for the peel of the mandacaru fruit. There was a concentration of phenolic compounds for mandacaru peel and degradation of antioxidant activity due to the pasteurization process for both fractions analyzed, except for the analysis of DPPH for the pulp. As suggestions for future work, the pasteurization kinetics of the product can be made by obtaining its thermophysical parameters, in addition to evaluating the effect of this treatment during the storage of the fractions.
The present work aims to evaluate the influence of thickness on the drying kinetics of beet slices and to adjust mathematical models (empirical and diffusive) to experimental data. The beets were cut in three different thicknesses (4, 6 and 8 mm) and the drying kinetics were carried out in an air circulation oven with a speed of 1.5 ms-1, at a temperature of 60 ºC. The empirical (Lewis, Page and Handerson and Pabis) and diffusive mathematical models considering the infinite wall geometry and the boundary condition of the third type were adjusted to the experimental data. The Page model presented as the best fit when compared to the others because it had higher values for R2 (R2> 0.99) and lower values for the chi-square function. The analytical solution of the diffusion equation with infinite wall geometry, showed an increase in the diffusivity and convective coefficient of heat transfer with an increase in the thickness of the slices and the low values of the number of biot indicate that the boundary condition used (third type) described the process satisfactorily. However, when there was an increase in the thickness of the slices, the lesser the variations in humidity inside them over time.
A compostagem é um processo de decomposição da matéria orgânica e que ocorre devido à produção de enzimas extracelulares provenientes de microrganismos presentes no sistema. Dentre as enzimas produzidas destaca-se as de atividade amilolítica. Essas enzimas são amplamente aplicadas em processos biotecnológicos nas indústrias têxteis, papel e celulose, couro, detergentes, bebidas destiladas, cervejas, panificação, cereais para alimentação infantil, produção de xaropes, ração animal, indústria química e farmacêutica. O presente trabalho teve como objetivo o isolamento de fungos com capacidade de produzir enzima amilolíticas, além de acompanhar a variação de temperatura em um processo de compostagem. As coletas foram realizadas a partir do 10° dia após a montagem da composteira e repetidas a cada 15 dias, totalizando sete coletas. No momento da coleta foi feita a aferição da temperatura e foram retiradas amostras para isolamento de fungos. A produção das enzimas foi verificada por meio do método de difusão em gel de ágar, em placas de Petri contendo amido, para a determinação da atividade amilolítica. Foram calculados os índices enzimáticos (IE) por meio da relação entre o halo de degradação do substrato e o halo de crescimento fúngico. A temperatura no tanque de compostagem variou entre 36°C e 43°C. No decorrer das coletas foram obtidos 36 isolados fúngicos, sendo que seis foram obtidos na fase termofílica. Os maiores IE foram obtidos entre os fungos isolados nas coletas 3, 6 e 7. Diante dos altos valores de IE obtidos pode-se afirmar que o tanque de compostagem representa um local potencial para o isolamento de microrganismos com capacidade de produzir enzimas de interesse industrial, com o consequente desenvolvimento de tecnologias enzimáticas.

A batata-doce foi submetida ao processo de secagem em leito de jorro nas temperaturas de 50, 60 e 70 °C, vazão do ar no bico atomizador de 3,0 m 3 /min e vazão de alimentação da bomba de 2,7 ml/min. A batata-doce in natura e as farinhas obtidas foram caracterizadas quanto aos seguintes parâmetros físico-químicos: umidade, sólidos totais, atividade de água (aw), cinzas, lipídeos, carboidratos, pH, acidez total tilulável (ATT), sólidos solúveis totais (SST) e ratio (SST/ATT cinzas quando se teve aumento da temperatura de secagem. A secagem possibilitou redução no teor de umidade, atividade de água da batata-doce in natura garantindo uma maior vida de prateleira do produto. Houve). O batata-doce in natura apresentou alto teor de umidade de 69,48% e aumento nos teores de diferenças estatísticas significativas entre as temperaturas utilizadas com relação aos parâmetros físico-químicos. No entanto, a temperatura de 80 °C possibilitou o maior valor de sólidos solúveis totais, ratio (SST/ATT) e carboidratos totais evidenciando o potencial tecnológico do produto em pó.
