ResumoA farinha de alfarroba, fruto da alfarrobeira (Ceratonia siliqua L.), árvore nativa da região do Mediterrâneo, é considerada um produto saudável e de elevado valor nutritivo, podendo substituir o cacau em pó na produção de produtos alimentícios. A partir disso, o objetivo deste estudo foi desenvolver biscoitos integrais à base de farinha de alfarroba como uma alternativa ao uso do cacau em pó, verificando suas propriedades nutricionais, alterações físicas e aceitabilidade. Os biscoitos foram desenvolvidos a partir da receita padrão à base de cacau em pó, sendo elaboradas três formulações com substituição do cacau pela alfarroba nas proporções de 100%, 50% e 25%. Tal substituição promoveu alterações físicas nos produtos, diminuição no teor de proteínas, carboidratos, gorduras totais e aumento nas fibras. Os possíveis consumidores foram capazes de notar diferença significativa no teste de diferença do controle entre a amostra padrão (100% de cacau) e a III (com menor teor de alfarroba), sendo os demais itens imperceptíveis estatisticamente. De acordo com as análises realizadas e o teste sensorial, verificou-se que a substituição do cacau pela alfarroba é viável.
