ABSTRACT. The objective of this study was to identify risk factors associated with the frequency of fatigued and injured pigs in a commercial slaughterhouse. A retrospective study was performed to evaluate 4,758 pig batches that were unloaded at a slaughterhouse during the years 2012, 2013 and 2014. The incidence of non-ambulatory pigs was 0.44%, 0.41%, and 0.5%, respectively. The characteristics of producer and the driver, type of truck, month, and the distance were risk factors for the incidence of non-ambulatory pigs. The high frequency of downer pigs from farms showed the absence of emergency slaughter protocols and lack of implementation of good transporting practices.Key words: non-ambulatory pigs, stress, transport losses. RESUMEN.El objetivo del estudio fue identificar los factores de riesgo asociados con la frecuencia de cerdos fatigados y lesionados en una planta de sacrificio comercial. Se realizó un estudio retrospectivo que evaluó 4.758 lotes de cerdos desembarcados en la planta de sacrificio, durante los años 2012, 2013 y 2014. La incidencia de cerdos no ambulatorios fue de 0,44%, 0,41% y 0,5%, respecto de cada año. Las características del productor y el conductor, el tipo de camión, el mes y la distancia recorrida fueron factores de riesgo para la incidencia de cerdos no ambulatorios. La alta frecuencia de cerdos lesionados procedentes de las granjas pone en evidencia la ausencia de protocolos de sacrificio de emergencia y la falta de implementación de buenas prácticas de transporte.Palabras clave: cerdos no ambulatorios, estrés, pérdidas por transporte. INTRODUCCIÓNEl transporte terrestre es un elemento esencial en la comercialización de los cerdos de engorde (Kephart y col 2010). Sin embargo, representa una fase crítica en la producción y con frecuencia es considerado como una de las principales causas de estrés, que puede tener repercusiones negativas en el bienestar animal (BA) (Mota-Rojas y col 2012), el comportamiento de los animales (Magnani y col 2014; Goumon y col 2014), la calidad de la carne (Velarde y col 2015), la presencia de contusiones cutáneas (Varón-Álvarez y col 2014) y la salud (Brandt y Aaslyng 2015). El estrés durante el transporte o en etapas previas al sacrificio influye en los procesos fisiometabólicos de los cerdos (Mota-Rojas y col 2012). Dependiendo del tiempo previo al sacrificio en que se presenten los estímulos estresantes, a las condiciones del transporte y ambientales adversas, así como al componente genético, la carne de los cerdos afectados presenta la condición pálida, suave o exudativa, u oscura, firme y seca (PSE y DFD, respectivamente, por sus siglas en inglés) (Mota-Rojas y col 2012, Velarde y col 2015). SUMMARYNational and international sanitary legislation state the guidelines that regulate the slaughter of animals for human consumption purposes due to its implications in animal welfare and meat quality. The aim of this study was to evaluate the slaughter in the swine population of a commercial slaughter plant using behavioural and management indicators. A total of 1,341 pigs were monitored. The electrical stunning method was assessed using behavioural indicators in the stunning box (jumps, falls, vocalizations, slips); the signs of consciousness (blink reflex, righting reflex, vocalizations, pain response) and organizational variables (stunning to bleed interval, collapse of the animal, position of the electrodes, application time of the tongs and effectiveness of the stunning procedure). Vocalizations (26.8%) were the behavioural response most commonly found and they were associated to the presence of falls and slips (P < 0.01), making evident certain problems related to the handling of the animals and the infrastructure design. Effective stunning was accomplished in 20.6% of the cases. The righting reflex was positively associated to the presence of all the other signs of consciousness (P < 0.01). The duration of the application of the tongs, the stunning to bleed interval and the electrical specifications were not adequate, evidencing several failures in the standardization of the process. It is strongly recommended to incorporate the behavioral and management indicators to audit routinely the efficiency and animal welfare standards during pig slaughter, as well as promoting training of the staff to guarantee a humane procedure.Key words: handling, stunning process, swine behavioural. RESUMENLa legislación sanitaria nacional e internacional contempla lineamientos que regulan el sacrificio de los animales de abasto, por sus implicaciones en el bienestar animal y la calidad de la carne. El objetivo de la investigación fue evaluar la insensibilización y el desangrado de porcinos, por medio de indicadores conductuales y administrativos en una planta de sacrificio del occidente colombiano. Se hizo un seguimiento a 1.341 cerdos insensibilizados por electronarcosis, usando indicadores conductuales en el cajón de insensibilización (caídas, saltos, vocalizaciones, resbalones); signos de sensibilidad (reflejo palpebral, intentos de incorporarse, vocalizaciones, respuesta al dolor) y variables de manejo (tiempo entre insensibilización y el desangrado, colapso del animal, colocación de los electrodos, tiempo de aplicación del método y efectividad de la insensibilización). Las vocalizaciones (26,8%), fueron las respuestas conductuales más frecuentes y se encontraron asociadas con las caídas y los resbalones (P < 0,01), evidenciando problemas de diseño de la infraestructura y de manejo de los porcinos.
