Wohl besteht der Eindruck, dai3 die separierten Produkte sich besser pasteurisieren lassen. Man konnte namlich eine Reduzierung der Keimzahl von loH his lo2, und zwar bei den Partien 3, 7 und 8 erreichen. Vorher war dies mit dem Durchlauferhitzer nie gelungen. Die geringere Viskositat bei dem aufgetauten Vollei wird hier sicherlich einen gunstigen Einflui3 gehabt haben.Das Vollei aus Bruteiern enthielt ziemlich vie1 thermoresistente Bakterien. Die Keimzahl/ml wurde nur von 10H auf lo4 reduziert; dies bedeutet einen Pasteurisationseffekt von 99.99Oio. Bei einer Anfangskeimzahl von 10H ist dieser Effekt sehr niedrig, d. h., es ist nicht nioglich, ein Qualitatsprodukt aus Vollei herzustellen, wenn man Bruteier verwendet hat.
