Le comportement alimentaire est contrôlé par les mécanismes de la régulation, notamment énergétique, nutritionnelle et émotionnelle. Il ne peut être activé que par un état de motivation et/ou une décision. Les instances qui permettent d'aboutir à une motivation ou une décision sont les émotions, conscientes ou non, les sensations alimentaires et les cognitions, conscientes ou non. Mais globalement, le comportement alimentaire est essentiellement sous le contrôle de processus inconscients. La restriction cognitive, définie comme une intention de contrôler consciemment et rationnellement le comportement alimentaire dans le but de maigrir ou de ne pas grossir, influence la sémiologie du comportement alimentaire. Cet article décrit les stades évolutifs de la restriction cognitive. Il montre comment le contrôle mental aboutit progressivement à une disparition des sensations alimentaires et in fine à l'émergence d'un comportement principalement gouverné par les émotions.

Instances that can lead to motivations or decisions are conscious or unconscious emotions, foodrelated feelings and conscious or unconscious cognitions. Taken as a whole, however, dietary behaviour is largely controlled by unconscious processes. Cognitive restriction, defined as the intention to control dietary behaviour both consciously and rationally, with the aim of slimming or not gaining weight, influences the semiology of dietary behaviour. This article describes the developmental stages of cognitive restriction, showing how mental control gradually leads to the disappearance of food-related feelings and in fine the emergence of behaviour that is mainly governed by emotions.
