Desenvolvimento e avaliação sensorial de goiaba-passa desidratada osmoticamente Development and sensory evaluation of osmotically dehydrated guava ResumoApesar de ser um fruto disponível durante todo o ano, nas regiões de cultivo irrigado das diferentes regiões do país, a goiaba apresenta grande desperdício pós-colheita, associado ao rápido amadurecimento, necessitando da aplicação de técnicas de processamento que diminuam o desperdício deste fruto. Objetivou-se, neste trabalho, estudar o processo de transferência de massa durante a desidratação osmótica de fatias de goiaba, além de avaliar os parâmetros sensoriais da goiaba-passa obtida sob diferentes temperaturas de processo e concentrações de sacarose. Fatias de goiaba cv. Paluma (3,0 × 2,0 × 0,9 cm) foram submetidas à desidratação osmótica em xaropes de sacarose a 40 °Brix, 50 °Brix e 60 °Brix, combinados com temperaturas de 30 °C, 40 °C e 50 °C, por meio de planejamento fatorial com ponto central. O pré-tratamento osmótico foi complementado com secagem convectiva a 60 °C e as goiabas-passa foram estudadas quanto ao processo de transferência de massa na desidratação osmótica, seguida de avaliação sensorial. Verificou-se que a máxima transferência de massa ocorreu durante as quatro horas iniciais de desidratação, sendo a concentração de sacarose o efeito com maior influência na diminuição da quantidade de água e no aumento da incorporação de sólidos. A avaliação dos parâmetros sensoriais demonstrou uma maior preferência dos provadores pelas passas obtidas em menor concentração de sacarose, para os atributos aparência, cor, textura e sabor. Não foram observadas diferenças significativas entre as notas atribuídas pelos provadores para o atributo odor. O perfil sensorial aplicado revelou a boa aceitação do pré-tratamento osmótico quando comparado ao fruto sem tratamento osmótico e seco apenas por secagem convectiva. The osmotic dehydration pre-treatment is used to partially reduce the fruit initial water content, before convective drying. Purpose of the present work is to investigate the influence of osmotic treatment followed by convective drying on the physicochemical parameters of guava slices. The Paluma guava was cut into slices of 3.0 × 2.0 × 0.9 cm, dehydrated and dipped in sucrose syrup at concentrations of 40, 50 and 60 °Brix, at temperatures of 30, 40 and 50 °C. The process was again supplemented by convective drying at temperatures of 50, 60 and 70 °C. Guava-raisins with and without pre-osmotic treatments were subjected to the following physico-chemical analyzes: soluble solids, pH, total acidity, ash, reducing and total sugars, water activity (A w ). The color was considerably changed into a darker and the total sugar reduced as a result of the syrup concentration and osmotic dehydration temperatures. Also, the pH and A w decreased through application of treatments. From the results it is recommended that the production of guava passes under dehydrating conditions of 60 °Brix at 50 °C and further drying temperature of 60 ° C is efficient.
A cinética de desidratação osmótica é uma técnica comumente utilizado no processamento de frutas imersas em soluções de sacarose concentradas sob diferentes temperaturas. O presente trabalho teve como objetivo estudar a cinética de desidratação osmótica de fatias circulares de banana Pacovan com casca, a 5 mm de espessura, submetidas às temperaturas de 40 e 70 °C, com solução de sacarose nas concentrações de 40, 50 e 60 °Brix. Acompanhadas no período de 4 horas e as condições de equilíbrio foram determinadas após 24 horas de imersão. A perda de água e ganho de sacarose durante a desidratação osmótica foram ajustados aos modelos de Lewis, Henderson e Pabis, Page, Peleg e Silva et alii, através do programa LAB Fit para descrever o processo, e os melhores indicadores estatísticos foram obtidos com os modelos de Peleg e Silva et alii, para descrever o fenômeno de transferência de água, já os modelos de Page e Peleg descrevem satisfatoriamente o ganho de sacarose. A inspeção gráfica da quantidade de água (e de sacarose) indicou que a remoção de aproximadamente 80% de água contida no produto ocorreu em até 800 min. A análise das superfícies de resposta obtidas em 800 min revelou que o tratamento a 70 °C e 60 °Brix foi o responsável pela maior perda de água e ganho de sacarose.
Resumo O processo de transferência de massa durante a desidratação osmótica pode ser influenciado pelas condições em que tal processo é realizado. Dessa forma, o presente trabalho foi desenvolvido com o objetivo de analisar a quantidade de água e de sacarose presente em fatias de goiaba variedade Paluma (3,0 x 2,0 x 0,9 cm) submetidas à desidratação em solução de sacarose a 40 °Brix e temperaturas de 30 e 50 °C. A cinética de desidratação foi acompanhada em pequenos intervalos de tempo por 4 horas, e as condições de equilíbrio foram determinadas após 24 horas de imersão. Ao final da desidratação, a quantidade de água presente no fruto desidratado a 50 °C foi inferior ao encontrado na goiaba desidratada a 30 °C. Quanto à quantidade de açúcar presente nos frutos, as condições experimentais pouco influenciaram na incorporação do açúcar. Os modelos empíricos de Lewis, Henderson e Pabis, Wang e Singh, Peleg, Page e Silva et alli foram ajustados aos dados experimentais. Os melhores resultados foram obtidos com os modelos de Peleg e Silva et alli.
