Starch is a very common carbohydrate. Along with its use in the pharmaceutical, textile, and paper industries, starch is widely used in the food industry as well, but native starch has limited use due to its certain properties such as retrogradation, problems related to gelatinization, instability at high temperatures, and acidic conditions. Various modification procedures are used to improve the properties of native starch. Along with consumer demands for healthy, minimally processed, and sensibly priced food products, more attention is being paid to nonthermal food friendly technologies that are environmentally friendly and do not severely affect the product. Cold plasma, ultrasound, high pressure, and pulsed electric field as nonthermal methods have little influence on the most important properties of food and thus have significant potential in this regard, as the food produced by nonthermal methods might be more acceptable to consumers. This paper gives an overview of previously mentioned methods in starch modification. Practical applications The food industry, at a recent time, has shown a great interest in the development of procedures which enable minimal food processing and getting products with better organoleptic and nutritive properties with little energy loss and shorter technological procedure duration. This paper presents some of the current research and results of nonthermal methods application in the food industry, mainly its application in starch modification and influence on certain starch properties.

Hay fever or pollinosis is the allergic reaction of the human body to allergic pollen grains and is a seasonal phenomenon. Pollen concentrations depend on the climate, geographic features, and vegetation. Trees, grass, and weed pollinosis is frequent in Croatia, common ragweed (Ambrosia artemisifolia L.) pollinosis in particular. Continuous monitoring of pollen air concentrations can provide timely information to the general public and can help sensitised patients and their physicians to prevent or alleviate allergic reactions. This is the task of health ecology services such as our Public Health Institute of the Brod-Posavina County. High-voltage electrical discharge (HVED) is considered as a novel, non-thermal process and is currently being researched regarding its effect on microorganisms (decontamination of food), waste water treatment, and modification of different compounds and food components. In this paper, four native starches (maize, wheat, potato, and tapioca) were treated with HVED, phosphorylated with Na2HPO4 and Na5P3O10, and modified by a combination of HVED with each phosphorylation reaction both prior and after chemical modification. Pasting properties, swelling power, solubility, gel texture, and particle size were analyzed. Although HVED induced lower contents of P in modified starches, it had an effect on analyzed properties. The results revealed that HVED treatment alone had a limited effect on pasting properties of starches, but it had an effect on properties of phosphorylated starches, both when it was conducted prior and after the chemical modification, reducing the influence of Na5P3O10 and Na2HPO4 on the decrease of pasting temperature. With minor exceptions, the gel strength of starches increased, and the rupture strength decreased by all modifications. HVED treatment resulted in a decrease of the particle size after the modification of maize and wheat starches, while potato and tapioca starches were not significantly influenced by the treatment.

Zavod za javno zdravstvo Brodsko-posavske županije, Slavonski Brod, HrvatskaPrimljeno u lipnju 2011. CrossCheck provjera u studenome 2011.Prihvaćeno u studenome 2011.21. rujna 2008. godine u Slavonskom Brodu dolazi do prodora mazuta iz toplinskih podstanica u toplovode, zatim u cijevi koje vode toplu vodu do slavina za toplu i hladnu vodu u stanovima. Cilj je ovog rada prikazati tijek događaja zbog nezgode i postupke koji bi se mogli primijeniti u eventualnim sličnim situacijama.Kemijski parametri "A"-analize defi nirani Pravilnikom o zdravstvenoj ispravnosti vode za piće (Narodne novine 47/08) određeni su spektrofotometrijskim i titrimetrijskim metodama, dok su mikrobiološki pokazatelji analizirani metodama membranske fi ltracije i određivanja ukupnog broja bakterija. Za analizu mineralnih ulja upotrijebljena je metoda infracrvene spektroskopije. Epidemiološku obradu stanovnika proveli su epidemiolozi. Ispiranje vodovodnih cijevi obavljeno je vodom i detergentom BIS O 2700. Nezgoda prodora mazuta u pitku vodu trajala je od 21. rujna do početka studenoga 2008. godine. Razlog nastanka nezgode jest kvar izmjenjivača za toplu vodu u toplinskim podstanicama koji je prouzročio miješanje vode iz toplovoda u kojem ima i mazuta, s toplom vodom za stanove na slavinama. U tom su razdoblju analizirana ukupno 192 uzorka vode: 174 uzorka na "A"-analizu, 192 uzorka na mineralna ulja te 5 uzoraka na policikličke aromatske ugljikovodike (PAH) i aromatske ugljikovodike: benzen, toluen, etilbenzen i ksilen (BTEX). Mineralna ulja bila su prisutna iznad maksimalno dopuštene koncentracije (MDK) u 55 uzoraka vode, "A"-analiza nije odgovarala u dva slučaja, a PAH i BTEX bili su ispod MDK. Za uspješnost rješavanja ovakvih situacija potreban je multidisciplinarni pristup s jasnim ovlastima svih institucija. Arh Hig Rada Toksikol 2001;62:349-356 Voda je jedan od osnovnih uvjeta za život. Jedno od ključnih pitanja u javnom zdravstvu jest opskrba kvalitetnom i zdravstveno ispravnom pitkom vodom (2).Grad Slavonski Brod opskrbljuje se pitkom vodom iz Vodocrpilišta "Jelas" koje je udaljeno oko 3 km od centra grada, a distribuira je komunalno poduzeće "Vodovod d.o.o." Slavonski Brod. Do danas je izgrađeno oko 570 km vodovodne mreže u koju se distribuiraju prosječno 222 L s -1 vode.
