The emergence and spread of mobile colistin (COL) resistance (mcr) genes jeopardize the efficacy of COL, a last resort antibiotic for treating deadly infections. COL has been used in livestock for decades globally. Bacteria have mobilized mcr genes (mcr-1 to mcr-9). Mcr-gene-containing bacteria (MGCB) have disseminated by horizontal/lateral transfer into diverse ecosystems, including aquatic, soil, botanical, wildlife, animal environment, and public places. The mcr-1, mcr-2, mcr-3, mcr-5, mcr-7, and mcr-8 have been detected in isolates from and/or directly in environmental samples. These genes are harboured by Escherichia coli, Enterobacter, Klebsiella, Proteus, Salmonella, Citrobacter, Pseudomonas, Acinetobacter, Kluyvera, Aeromonas, Providencia, and Raulotella isolates. Different conjugative and non-conjugative plasmids form the backbones for mcr in these isolates, but mcr have also been integrated into the chromosome of some strains. Insertion sequences (IS) (especially ISApl1) located upstream or downstream of mcr, class 1–3 integrons, and transposons are other drivers of mcr in the environment. Genes encoding multi-/extensive-drug resistance and virulence are often co-located with mcr on plasmids in environmental isolates. Transmission of mcr to/among environmental strains is clonally unrestricted. Contact with the mcr-containing reservoirs, consumption of contaminated animal-/plant-based foods or water, international animal-/plant-based food trades and travel, are routes for transmission of MGCB.

Ingestion of indigestible foreign bodies in cattle is a pathological condition of both economic and health importance. It is has mostly been reported in association with feed scarcity. The aim of this study was to investigate the occurrence and nature of indigestible foreign materials in abattoir fore-stomach specimens in Ngoma district, Rwanda. Each chamber was opened by incision, then given a thorough macroscopic examination by visual inspection and palpation for the presence of foreign materials. The results show that there is an overall occurrence of 17.4% foreign bodies in cattle. The highest occurrence (25.3%) was recorded in June (the driest month). Results further show that the majority of the foreign bodies were plastics (65.0%). More foreign bodies (29.5%) were found in older animals (5 years and above) than in younger and middle-aged animals (16.5 % and 6.0%, respectively). There was a higher prevalence of foreign bodies in female cattle (20.0%) than in males (15.7%). The presence of cassette tape, as observed in the study, has not been reported elsewhere. The high representation of plastics in animals (65.5%) in the light of a government plastic bag ban in supermarkets presents a major challenge to livestock production in Rwanda. What is disturbing is that it is not known if this problem is increasing or decreasing as there are no previous studies for comparison. However, the results will serve as a reference point for future studies to understand the true trend and true burden of plastic bags in livestock.

Fasciolosis is an important zoonotic disease that is responsible for a significant loss in food resource and animal productivity. The objectives of this study were to determine the seasonal prevalence and risk factors associated with Fasciola infection in cattle. The results were obtained by coprology, antemortem and post-mortem survey of three abattoirs (HTPA1, n = 500, HTPA2, n = 400, and LTPA, n = 220). The seasonal prevalence of Fasciola infection was 10.4%, 12.8% and 10.9%, during summer, 11.2%, 10.8% and 8.6%, during autumn, 9.8%, 6.5% and 5.9% during winter and 8.2%, 7.8% and 5.9%, during spring in the three abattoirs HTPA1, HTPA and LTPA respectively. There was a significant association (p < 0.05) between the intensity of infection and body condition score (BCS) of cattle at each abattoir. Factors such as age [HTPA1 (OR = 3.6, CI = 1.2, 10.2), and LTPA (OR = 3.8, CI= 2.4, 6.1)], sex [LTPA (OR = 4.2, CI= 2.5, 7.0)], breed [HTPA2 (OR = 2.3, CI = 1.3, 4.1) and LTPA (OR = 2.5, CI= 1.3, 5.0)] and BCS had significant (p < 0.01–0.001) influence on the prevalence of fasciolosis. In conclusion, the infection with Fasciola spp was higher in the summer than in the winter; a positive association was established between the prevalence of fasciolosis and poor body condition in study animals. This study, therefore, suggests that fasciolosis could be causing substantial production losses, mainly due to cattle weight loss and liver condemnation.

Foodborne disease (FBD) is a global public health concern, and foods from animal sources have been associated with outbreaks of food-related illness. In this study, animal carcasses from the two abattoirs (HT1 and HT2) in the formal meat sector (FMS) and slaughter points in the informal meat sector (INMS) were examined at two stages of slaughter (before washing and after washing) for aerobic colony counts (ACC) and total viable count (TCC), as well as Escherichia coli and Staphylococcus aureus count. At each stage, carcasses were sampled by swabbing at the neck, brisket, flank, and rump. ACC for beef, mutton, and pork carcasses at HT1 and HT2 before washing were between 2.5–5.8, 2.2–4.7, and 2.7–3.7 mean log CFU/cm2, respectively, and TCC count before washing was highest on the neck of cattle (6.3 ± 2.4) and after washing was highest on the perineal of sheep (5.7 ± 6.9). In the INMS, TCC count was highest on the brisket (6.9 ± 3.2) and in the neck (5.5 ± 2.4). Higher ACC values of 6.2–6.7 mean log CFU/cm2 were obtained in the INMS. The highest count for E. coli (4.2 mean log CFU/cm2) after washing was in the neck, while the highest count for S. aureus (4.0 mean log CFU/cm2) was in the flank. All bacteria count in the INMS exceeded acceptable limits, and washing did not significantly reduce microbial load in meat in the FMS and INMS. Bacteria count in the FMS and INMS exceeded acceptable standards. However, meat processed in the INMS poses a more significant risk of FBD to consumers.

Food production needs to double, with minimum waste, if hunger and poverty is to be alleviated in South Africa. The condemnation of liver during meat inspection represents a huge waste of a protein food resource. This paper measures the quantity of liver condemned in three abattoirs in the Eastern Cape Province of South Africa and assesses the causes and the monetary loss associated with these condemnations. A retrospective study (RS) (n = 51 302) involving the use of abattoir slaughter records from 2010-2012 and a post-mortem meat inspection (PMMI) (n = 1374) was conducted from July to December 2013. The RS revealed the leading cause of liver wastage as fasciolosis (5.95%, 4.48%, and 2.7%), fibrosis (2.74%, 2.37%, and 1.0%), and abscessation (1.11%, 2.78%, and 1.5%) for the 2010, 2011, and 2012 respectively. During the PMMI, the same factors caused liver condemnation in addition to calcification (8.3%, 6.8%, and 3.2%), Cysticercosis bovis (1.7%, 2.4%, and 1.3%) and improper evisceration (4.8%, 12.4%, and 27.1%) for the abattoirs X, Y, and Z respectively. A total of R 343, 330 (USD 45,271.07) was lost due to the condemnation of liver between 2010 and 2012. The further loss of 3290.4 kg of liver was calculated for the six month in 2013, and its financial value was R 59, 227.2 (USD 5889.82). The result of this study provide baseline information on major causes of liver wastage in cattle slaughtered in South Africa as well as the direct financial losses and demonstrate the huge waste of ideal protein food source.
