Hospitality is a creative industry. A national cuisine may contribute to a country's competitiveness by considering the various elements of sustainability in a region, stimulating economical development, and improving the national image. In Europe, the Michelin Star system is the most respected ranking system for high-quality or haute cuisine restaurants. This research is based on whether the characters of Hungarian cuisine can be identified by domestic fine-dining representatives.
METHODOLOGYUsing qualitative research and content analysis methodology, the paper explores whether fine-dining professionals and Michelin Star restaurants can identify local gastro culinary in the public dialogue.
MOST IMPORTANT RESULTSPrizing a Michelin Star could be an innovative or sustainable business strategy, meeting as it does the gastronomic expectations of tourists. Providing a theoretical framework of the relevant literature on the role of innovation within the gastronomy industry, this paper analyses interviews collected from an online media platform. Although not all are covered in this paper, location, co-working, wellbeing and existential balance, inspiration, and burnout are factors identified during the research, factors that could drive Hungarian cuisine in a different direction than others in the international field.
Az emberek viselkedését társadalmi normák befolyásolják. Mivel a vírus emberről emberre terjed, ezért fontos szerepet játszhat a betegség lassításában az, hogy mások viselkedésének másolása mennyire van hatással hosszútávon a társadalmi kapcsolatokra. A jelen felmérés a magyarországi első és második országos lezárás során készült online kérdőívek válaszainak összehasonlítására épül. A tanulmány megállapítása az, hogy a járványhelyzet két lezárással járó szakaszát eltérő intenzitással élték meg a válaszadók. Míg az első hullámot a helyzethez való viszonylag gyors alkalmazkodás és az egyes csoportok iránti nyilvános szolidaritás vállalása határozta meg, addig a második hullám inkább az egyéni és intézményi értékek közötti feszültségeket, valamint a köztük lévő ellentmondásokat hozta felszínre. A longitudinális felmérés jelentősége, hogy a pandémia értékeinek változásai az egyes lezárások eredményei mentén megragadhatóvá váltak.
Koronavírus járvány idején fenntarthatóság szempontjából fontos meghatározni, hogy milyen gondolkodásminták határozzák meg, hogy egyes társadalmak előnyösen vagy éppenséggel hátrányosan reagálnak vészhelyzet esetén. Az empirikus tanulmány olyan, az emberek gondolkodásmódjában tetten érhető jellemzőket keres, amelyek az aktuális járvánnyal kapcsolatos kihívások és a jellemző viselkedések előfordulására, értékrendjére világít rá. Az eredmények alapján megállapítható, hogy egyéni szinteken a reziliencia, a rugalmas alkalmazkodás képessége, fontos szerepet játszott a korlátozások idején, másrészt az erős családi kapcsolatok mellett a szolidaritás és a spiritualitás is fontos erőforrásokat jelentenek a reziliens viselkedés gyors adaptálásához.
A This paper aims to present the value dimensions of the protection of the domestic food market by analyzing the consumer value of the European Union geographical indications of origin (which defines certain foods as national ownership). The research covers the relationship between contemporary food policy and sociological values of consumers, including identity, credibility and culture, as well as the complexity of globalization. Although food plays a central role in maintaining human life, consumers generally know very little about where the purchased product comes from, the environmental and social costs involved, as monitoring the environmental impacts of the entire global food system is complex and a complex process. For a customer to understand what steps need to be taken to ensure the sustainability of the system and launch a change needs a huge amount of knowledge. This study applied face consciousness as a sustainability is a cultural dimension to explore the cultural impact on consumers' decision-making styles. The paper is used empirical research multi-dimensional scaling to find out what some food products become known to domestic customers while other products do not. The results found the gap that the Hungarians are rather risk-averse customers than health conscious which does not fulfil the requirement of the long-term sustainability of the nation.Kulcsszavak: társadalmi értékek, fogyasztói észlelés, fenntartható fejlődés
