Die daraus entstehenden, potenziell gesundheitsschädigenden Ernährungszustände der Betroffenen können ein Risiko für klinische Komplikationen darstellen und sind häufig mit einer verminderten Lebensqualität verbunden. Aus verhaltensbezogenen Studien ist bekannt, dass sich die Nahrungsaufnahme neben den physiologischen Systemen auch durch äußere Faktoren beeinflussen lässt. Im Vordergrund stehen dabei positive Veränderungen der Umgebung, die zu einer Optimierung der Nährstoffaufnahme und damit zu einer Verbesserung des Ernährungszustandes und der Lebensqualität beitragen sollen. Zu den Umgebungsfaktoren, die bereits Gegenstand wissenschaftlicher Untersuchungen waren, zählen der soziale Esskontext, der Ort der Mahlzeitenaufnahme, die Ablenkung während des Essens, die Portionsgröße, die Darstellung der Speisen und Snacks, der Geruch und die Erreichbarkeit von Lebensmitteln sowie die Speisenvielfalt. Alle Faktoren weisen grundlegend das Potenzial auf, sich durch kleine Veränderungen positiv auf das Risiko bzw. die Symptome einer Fehlernährung (Mangel-, Überund/oder einseitige Ernährung) auszuwirken.
